Every since I saw this throw down seven years ago i have been using this recipe (Mike Maroni ) for my meatballs. My family and friends can not get enough, i use in Meatball subs, meatball lasagna, meatball appetizers i also use different sauces but i always use the same meatball recipe. My favorite show with Bobby Flay. He never goes into these thinking he is the best but always cooks everything in his own style win or lose. He never disrespects where they obviously enjoyed the more traditional style.
Bobby Flay says the show is about people who makes incredible food across the nation. The Throwdown! is only for fun. I think Bobby Flay is there just to eat their food.
I purchased a pot from the north fork location and they were not good at all. They tasted like pre packaged frozen meatballs that you buy at Costco. I was so disappointed.

I just found out Italians don't actually serve meatballs with spaghetti. Italians will tell you it is an American thing. I feel like I had been lied to all my life. But I wonder why they don't. It sure is delicious!
They really did not show how they made their sauce. THAT is just about the most important ingredient! No sauce, no dish, for this recipe. About 7 lbs. of fresh plum tomatoes, peeled and seeded, with 32 leaves of fresh basil, made enough sauce for two (2) people, for my shrimp marinara.
Great butcher ? Bobby comes in and the butcher shakes his hand, handles the raw meat, grinds it up, then shakes bobby"s hand again , never washing his hands , YUCK !
Voting for Bobby and only halfway through the video. First, Bobby's meatballs will have texture because they were sautéed initially, next parmesan all the way, pecorino is just too salty. Parmesan offers a salt flavor, yet, a nice depth of cheese flavor also. Not sure why this chef guy would smother his spaghetti in a bowl. For sure it will not be al dente.
It's interesting that Bobby mentioned the color of Mike's sauce-It was the first thing I noticed-Mike's is deep red & Bobby's has more of an orange color-I think this is because Bobby's meatballs were fried contributing more oil-Usually when you see the orange color it is a result of a greasy sauce.

It's al dente. I've had it at the restaurant. Meatballs are the best I've had. Best tomato sauce, too. Haven't had Flay's meatballs, though.
