Ingredients
1st method
300g sour limes (11 nos)
¾ tsp turmeric powder
3 tsp (1 tbsp) salt
6 tbsp oil
2 -inch piece ginger, crushed
12 - 15 medium size garlic cloves, crushed
¼ tsp hing (optional)
2 tsp roasted ground cumin
1 tbsp chilli powder
½ cup vinegar
320 g (1 ½ cups) granulated sugar, powdered
2nd method

1 ½ tbsp K chilli powder
1 tsp ajwain (carrom seeds)
½ tsp methi seeds (fenugreek seeds) roasted and ground
2 tsp rai dal (split mustard seeds)
½ cup vinegar
280g (1 ⅓ cups) granulated sugar, powdered

Follow the recipes exactly, Zohra. In the end product, the peel will be soft.
For sweetening why not use jaggery instead of sugar!?

Yes, JK, you could surely use jaggery in place of sugar. But see that it is grated fine for it needs to dissolve quickly. Also, if using jaggery, you'll have to add around 20 to 25% more of it by weight as compared to the weight of sugar mentioned in the recipe. I have a quick lime pickle and lime crush (super delicious) here. ua-cam.com/video/WeHE80PskB4/v-deo.html
The lime crush is easier to make and can be enjoyed right away. For the lime pickle you have to give it time to mature and also make sure you don't boil it for more than a few seconds , or the peel will turn a little firm.

Can castor sugar be used
Yes, of course, Veronica. But grind it to a powder, because we want it to melt quickly.
Instead of sugar can i use jaggery. Please let me know
Yes you can, Dulcine. But you'll have to increase the weight of jaggery as it is less sweet as compared to sugar. For method 1 you could add 320+ 80g + 400g jaggery to start with. At the final stage when the pickle is ready for use, if you taste the pickle, and you find it needs more sweetness, then add 2-3 tbsp of finely grated jaggery directly into the pickle, stir it well. Keep aside for 2 days. For method 2, you could add 280+70g=350g jaggery. Adjust the taste at the end if necessary. Hope this helps.

Cooked for half and hour, the peel is hard and not soft
The pickle has to be cooked only briefly, Zohra. That's an important step. If you cook the peel any longer like in many other recipes, the peel could harden. Please follow the recipe exactly.
