Hey I'm new to your channel and do fast I've really enjoyed your videos...I have an awesome technique for smoking steaks. I use Montreal steak seasoning paired with smokehouse maple seasoning. Place in the smoke on SMOKE mode for 40 minutes.... take the steak out place in grill grates crank up smoke to 450. Then swear the steak for 6 minute...1.5 minutes at 45 degrees angle then turn opposite direction for 1.5 minutes... repeat on other side
How to do a perfect steak in an air-fry pan? You know, those oil free pans to make frites? Would love to see how you do it because I have major digestive problems with any oil.
If you have digestive problems from oil, would that not include the rendered fat from beef? I think some thinly sliced steak would fry up pretty will in an air frier
using that great piece of beef and then frying in what type of oil? also, if I were to copy this recipe, I would not go over 45 C on the first cook and then get the oil even hotter say 205 C. thanks and keep making videos.

@@BeeRich33 That's cold smoke, bad smoke, you want to get the grill hot before you allow your meat to meet smoke. That cold smoke is overwhelming, bitter, smells like a house that burnt to the ground, and besides it's actually poisonous.
Maybe next time you should try flash frying it in ~200°C oil or the highest setting, just until you get a nice crust! Then you can have a bit more time in the smoker for flavor :)
I'd be interested to try a cold smoke. From what I know, meat that's raw absorbs more smoke flavor and the pores get tighter as it gets hot? Maybe a cold smoke for as long as you can get away with then fry?
How is the smoke from pellets smokers, cold smoke vs warm smoke? Is there any noticeable different in taste? Does colder smoke gives a little bitter taste to the meat? Few people say cold is bad because it gives bitter taste, but I think those all uses wood fire BBQ's? Did you notice any bitter taste? Could be that the fan blows enough air into the fire pit where the pellets burn that the smoke gives off the right flavors at any temperatures. But I don't know so I ask. Btw. If you ever again think the steak is slightly overcooked, less talking and more cutting. If you slice the steak right after you remove it from the frying oil, there will less of an "afterburner" affect. As the outside is hotter then inside even after removing the steak from the oil the internal cooking of the steak will continue, unless you rapidly starts slicing the steak. Personally, I would have started with smoking the steak, then sous vide the steak beforehand and have it cooled down before frying it. And also I would have used hotter oil, and oil with higher smoke point. 230 ish C just to crispen up and fry up a delicious crust. With higher temp oil the outside crust will form much faster and that will also help ensure as little grey area as possible on the steak. Sous wide would ensure steak can not be over cooked. Every time.

I loved this from the tv series "king of queens" old father in law played by the great jerry stiller from from scienfeld who was responding to somebody complaining about fatty food says "In my day, we had a heart attack at 56 and we liked it!" But nowadays there is the keto diet, carnivore diet, paleo diet where they encourage you to eat lots of fatty meat as long as you don't eat flour and sugar and carbs.
Should have tied it tight with butcher's twine......it would have fit and stayed together nicely....It still looked great and I'd eat the mess out of it.
