Happy New Year Amanda! Thanks for another great episode. I love the idea of baking the shredded tofu bbq. Will give that a go for sure! My friend and I went for a long drive yesterday and were probably in your territory. I hadn’t been to Byron yet so we drove from the sunny coast along heaps of back roads (Esk, Beaudesert, Canungra, Nerang, past the natural bridge National park, and various other lovely places in NSW over to Kingscliff and then down the coast to Byron. What a gorgeous country we live in!! We did stop in Mullumbimby(?) and found a vegan restaurant for lunch and it was great! Thanks for sharing your ups and downs with all of us. So glad your surgery is way behind you now. All the best wishes for an amazing 2025!! ❤❤

I've tried crumbly tofu but not tempeh, so I think it's time to try that and use up the teriyaki soyce I have in my fridge! edit: hope you have a great time and get some rest too while you you're off!
