    I butterflied my breasts and then stabbed it with a fork a couple of times and the breading stuck better and it cooked in less time. Lovely alternative.

      more surface area means more flour on the chicken which means more oil absorption :)

    I made this for me and my 4 year old for supper tonight. It was incredible! By far some of the best and most flavorful fried chicken I've ever prepared myself and the breading stuck to the breast like nobody's business. My daughter, picky eater that she can be, was all about this. I think it might be really tasty over that garlic and olive oil pasta dish Chef John did a video for (don't remember what it was called exactly).

    Alright John...I made this for my family tonight. This is THE BEST CHICKEN I HAVE EVER MADE...EVER!!!!!!!!!!!!!!!! I am surrounded by admirers now, LOL. I served the chicken with a crusty multi~grain bagette, zucchini sauteed in olive oil with garlic and topped with shaved parm. A little drizzle of hoisin sauce put this over the top delicious. Thanks you so very much posting this recipe. I love your work! Keep the vids coming!

    I just cooked this thinking I had nothing to learn making fried chicken. I was wrong and forever changed for the better. This is the MOST moist fried chicken I've ever eaten! I used green banana flour instead of traditional because I'm one of those no wheat weirdos. It browns slightly faster, but gets very crispy and has no flavor. I left the skin on because I love it. Very nice recipe. Now that your creme fraiche is a staple in my fridge I always have extra buttermilk. I served it with boiled mashed turnips and browned butter broccoli. In the past I never would have fried chicken breast unless I cut it into a small dice , so I wouldn't dry it out. You've made me a better wife Chef John.

    I always fry chicken or pork chops with a thin coating of flour. It never burns. It is better to turn in several times, it keeps the coating from burning.

    Looks so good! When I fry chicken like this I butterfly the breast for quicker & more even cooking. However, I must try the brine as i've never done that.

    I fry skinless boneless chicken breast regularly, without putting in a brine and it works great. I put it in floor then egg then bread crumbs it works great.

    @hanphilip Heavy cream, I would guess would be a alternative. But, buttermilk is naturally fermented and has an amazing flavor for southern cooking.

    Funnily enough, this is very similar to how I usually do this anyway. Never looked up a recipe beforehand, just gave it a go. The chicken comes out super tender.
