    Granulation of flour changes how it absorbs water. We are comparing flour with three different granulation sizes milled from the same grain. Check out our video on the next post to see result.
    Finer flour absorbs water more quickly because it has more surface area. Coarser flour hydrates slowly, and it takes a longer time to form gluten. When using coarse flour, it helps to pre-soak and let it rest for at least 1 hour or longer. It allows for the flour granules to fully hydrate and gluten to start forming. This helps to create a stronger dough during mixing without having to mix for a long time.

    I have the same mill as you guys but when I mill it on the fine setting like you guys it does not clump as nice. After sifting it will a sifter off of amazon it looks like there are super small bits of grain that almost look like white rice. The flour is not very smooth when I mill it on that setting like your guys are. Do you have any idea what is going on?
