      Lmao. I don't know why you are so shocked by this, it's simple science. He had a bit of flour on his fingertips, so the powder kind of acted as a burn shield for a split second.
      Even if he didn't have any powder on his fingertips, he wasn't DIPPING his finger in the oil anyway. He was merely grazing the surface of the oil to push the crab into position. Besides, when you've been working in a hot kitchen environment for so many years, your body becomes slightly desensitized to the heat. It's exactly how asians, mexicans, etc have been working in a restaurant for years, constantly dipping their hands near boiling steaming pots of soup and oil, their skin becomes used to the heat. It's because the skin on their hands are effectively dead! x'D

    I'm a pesca-vegan (a vegan whom eats seafood on rare special occasions) and the spider roll is one of my fave sushi rolls! MUST HAVE WASABI THOUGH! 10 PIECES OF YUM. Thx Hiro!

      Looked like he had a coating of batter on his fingers. Gives a few seconds to work with before the heat gets to your skin.

      Yeah, I think Hiro should be checked for peripheral neuropathy secondary to diabetes. I'm pretty sure you shouldn't be able to fry your own fingers in such a nonchalant way.

      jakob sors really. I worked near the oil couple of times at a sushi restaurant. And when it gets busy, them droplets sometimes land on the wrong place. lol

    I like stuff with unagi.. Eel sauce is the best sauce.. Grilled Eel is deliciousness.. If there was a eating contest of grilled eel rice bowls with eel sauce, I would win sir. I would eat grilled eel until I become an old thousand year old man.

    definitely one of my favorite foods of all time I love soft shell crab... although I will say I'm used to spider rolls with imitation crab meat instead of asparagus, that throws me off guard a bit

    That looks great, ive never had soft shell crab, is there a difference in taste to a crab of the same kind with the shell? Btw, how do you guys come up with what goes into the sushi along with the crab? Do the ingredients just go well together?

    For the people worried about the chefs finger, my pops has been a chef for many years, he taught me that if you have flour/batter mixture on your fingers it gives you more of a reaction time

      ***** Is it only the gills and face you have to remove or do you need to remove the innards aswell? I've never eaten it myself, just watched a bunch of videos and read up online and it seems like the common thing is to remove the face and gills.

    The spider crabs we used at the sushi bar i worked at were the size of 2 fingers...they wanted us to portion them into 3 pieces even when it was already small to begin with. They got mad at us when the legs would fall off... After developing a technique to cut the crab and fry it perfectly it got pretty ridiculous thinking about it. After tasting it for myself I did not even like the taste of it because our tempura batter was so thick. I bought my own crabs and made my own at home with a much lighter batter and with my own fillings in it... If my boss saw what I did she would be embarrassed how generic her rolls were compared to some low life cook like me xD

    Hey chef spider taste better if ypu starch it however startch does dirty the fryer oil a lil bit. And adding masago to the top of the spider. Roll gives it a better look and taste.
