  • Todays Big T Cooks episode brings you a slow cooked and smoked chuck roast and beef short ribs. The chuck roast was a 12 hour cook, marinated in mustard and seasoned with a smokey rub. The beef ribs were added to the kettle bbq and smoked for 3 hours. The perfect AFL Grand final day feed.
    The kettle bbq was lit and brought to a temp of 130 to 150 degrees and then the chuck roast was smoked at this temp for 5 hours. After 5 hours wrap the roast in foil and smoke for a further 6 hours to tenderise.
