I’ve been making this for fifty years 😵… did I really say that! It’s always been a family favourite of ours. Sometimes I make it deep like this as a cake, I also make it as petit fours, small chocolates. When I make it as sweets I blitz the biscuits down into smaller pieces more like biscuit crumb. I use cocoa powder, golden syrup and butter melted and stirred into the biscuit crumb. I spread it into a Swiss roll tin about 2 cms deep. Leave to set then I add a variety of toppings. Mint chocolate… mix icing sugar, green food colouring and few drops of peppermint extract, spread thin covering over the biscuit mix and let set. Melt chocolate and spread over the top leave to set then cut into 1 inch squares, it’s very rich. Another way is triple chocolate, same biscuit base, topped with chocolate ganache let set then melted mix of dark, milk and white chocolate swirled to give marble look, or just plain chocolate and top each square with a nut or glacé cherry halve. Fourth way is biscuit crumb base, then make buttercream, butter and icing sugar with one tablespoon of birds custard powder. Spread thin layer over the biscuit let set. Then top with melted chocolate cut into 1 inch squares whilst the chocolate is still a little unset top with small piece of edible gold leaf. These are all very rich but delicious 1 inch squares are plenty big enough, you can always have more than one!

In England we call this tiffin and usually make it in a tray and slice into small bars. There are hundreds of versions with different biscuits, types of chocolate and nuts and with glacé cherries etc. I made one with Jaffa Cakes as the biscuits so you got pieces of orange in it. I’ve no idea how it tasted as when I came back to the kitchen the entire thing had been scoffed by my greedy family!

Tv network Alton Brown has an interesting flavored one using chocolate wafers. You can use lady finger biscuits that the UK use for the trifle dessert, or graham wafers. Graham wafers is also good Have you tried the easy version? Take thin wafers, any flavor. Or you cam use a thicker cookie/biscuit depending on your wish. Put a layer of whipped cream on the bottom of a fancy plate or pan. Cover each wafer with a good layer of whipped cream and start placing the wafers side by side on the plate. When you've reached the end of the plate cover the whole thing with a thick layer of whipped cream. Let it sit in the fridge for 8 hours or until the wafers get soft. 💗

We have it as a slice in Italy as well. We actually call it "Chocolate Salami". We shape the mixture like a salami then slice it. Many of us add white rum to the mixture which makes it all even yummier and a little moist, and depending on the amount of rum you put in, a little boozy. In Portugal you can get slices of this in vending machines, or buy them at pastry shops, coffee shops or supermarkets (it’s in the refrigerated area). It’s called “salame de chocolate”.

I know this as a traditional German cake called "kalter Hund" (cold Dog)
In Germany, it is also made in a loaf pan, called COLD DOG (made with coconut oil and not butter). Seeing it here for the first time with butter.
