I enjoyed it immensely! Going back to this example with sipping on someone's beer and not liking it: what I hear quite often is "Nah... I'm good." And generally, the expression "I'm good" as a way of declining something offered to you.

I think being too polite when it comes to the use of words can many times cause confusion.
Some, as you mentioned, cover what they are really saying with a different sentence that sounds positive and polite but when someone is truly being positive and polite then things can get confusing as to whether a person is being positive or just being polite.
I always find the best approach is to be straight with people.
Of course, you don't need to go to the extent of telling someone their food was horrible but you can suggest ways that they may find to make it better.
For example, you might say " You know, if you were to add a little more salt, you might enjoy the taste even more'
In that way, you have suggested a way to improve and without telling a person there cooking was horrible.
