I read somewhere that the invention of masa harina was a big factor in giving women more freedom in Mexico because this way is so labor-intensive that it would take all day to make tortillas for a large family

Wow! Such an honor to learn this special process of making corn tortillas. This is special because the ancient Nahuatl/ Aztec created this food. Corn was found nowhere else in the 1500's. Thru the process of Colonialism the Spaniards re-educated OUT some if not alot of indigenous Aztec/Mayan education. I have mostly Hispanic friends & always wondered why, (when I ate over) it was so ethocentric, why the look in their eyes was so deeply pleasant to them, when there is joy in eating. How the sisters would nag each other of wrong or right way. The process of cooking MX food is the ancient hidden history of the gr8 Aztec/Mayan civilization. Thank you so much for sharing & posting this video. It means alot to an "outsider" like me.

I'm a Malaysian of South Indian descent and our history in India is 1000s of years old. And we use merata too even today its called "ammi" in Tamil and its made of granite. Thank you. First off, it’s always a great day to be indigenous & happy Indigenous Peoples Day.
My first question is where can we get a mortar table like that & would a heavy rolling pin suffice?
#2: What tortilla press do you two recommend?
#3: What is the blue thing that is in between the masa before pressing?
You can find the 'mortar table' on Amazon search for a Metate.
She has a tortilla press in her Amazon store.
She usually uses a plastic bag with the sides cut ✂️ on the tortilla press to make it easier to get the tortilla off so it can be cooked. 😀💛

Thanks for the video. I use the metate a lot. My that is put grandmother handed it down from four generations. I also use an electric molino and finish it off on the metate. Tamales, tortillas and atole taste better because of the work put into it.
I was in Mexicali this weekend in search for these at all the tortilla shops.. we found one that sold some to us as well with the cal.. will be using for tamales tho!! So much work to prepare this but the taste is worth it!!

If I ever find a metate I'm going to do this. I usually make masa from dry corn pre-ground. I'm lucky to be able to buy authentic masa at a local food shop that specializes in home made tortillas, gorditas, tamales...Delicious. I want to try it myself though.

Oh wow. I have made them before but only following a recipe and they weren't good. Good enough you could eat them but not good. And this after I went through the whole learning curve about what to use on the press (cut up a big ziplock. BOom done) Then our store just didn't have Masa Harina for a long time. Great. Got some of another brand from Amazon and I think it wasn't ground fine enough. The masa felt a bit gritty. Again fail tortillas. Then Surprise! The store had it finally!!! So at last, good tortillas. Quick, easy, and with very little cleanup. Thank you. All it took was a feel for the right dough consistency and practice on the tortilla press which I'd had lots of making fail ones.

I discovered your channel a month or so ago and it has re-inspired me to take another shot at corn tortillas. This wasn't the video I saw the recipe from, but that one is closed to comments. Anyway, I have a question. When I mix my masa, it feels right, soft and velvety, but after I let it autolise, (soak up water) for 30 mins, and start to form it into balls, it wants so split as I roll it into a log for dividing. I'm using MaSeCa. Do I need to add more water, or let it sit for more time?

That’s a lot of work ‼️ I rarely eat American corn 🌽 tortillas because they lack flavor. The ones from Mexico 🇲🇽 are super great‼️ I will give this recipe a try using my Vitamix until I get a hold of a metate. I was my mom’s sous chef 👩🍳 growing up. She was raised by a single dad in Mexico 🇲🇽 and had to learn to cook by watching relatives. I am glad to have you guys to help out in a myriad of Mexican dishes, especially because my mom is now gone. Where do you find the powder lime❓

Isn't hominy what corn/maize is after nixtamalization? One wouldn't, in that case, nixtamalize hominy again? Or have I got something mixed up somewhere?😅

One of the fancy Mexican restaurants in my city (Austin) nixtamalizes their corn everyday for tortillas, and they get their organic corn from the feed store 🤣.
Where can you find the flat mortar for grinding the masa?

Hi, you can try a high speed blender. A lot of our foods have a lot of salt, but of course, you can salt to taste!
