I just made these and they were delicious! I didn't even get to decorate them before my family just helped themselves to one too many cookies lol. I used Kerry Gold unsalted butter. The taste is similar to danish butter cookies but with the sugar cookie consistency. Definitely a keeper!

I thought royal icing had egg whites in it? Confused.
You might not answer but is it okay if it’s not unsalted butter?
it's best to use unsalted butter. Salted butter has more moisture and can change the texture. They may not hold their shape.

Not sure if I did something wrong but I’m only getting about 20 cookies not 60 at a 1/4” thick
Hello Nanette, did you roll up the scraps each time after cutting and press back out and freeze again for 20 minutes? I did that several times. Also, it'll depend on the size of your cut-outs
