ok. first of all pancake japan, the white egg must whisk in metal or glass bowl dont plastic cause it becomes break or oily. and when recipe said fold, try using spatula , dont use whisk it loses the air in white egg. just suggestion

Raphael, you destroy all the fluffiness and get rid of all the air you gave them doing that, you should always fold in egg whites with a *spatula* ! Try it next time and you'll see the change. You did a good job. I would however recommend that you flip the Japanese pancakes with another pan on top that way the bottom will become the top. It's also so you don't have to take the round metal thing off just yet. I'm very impressed that you never gave up.

The reason why the pancakes weren't that fluffy is because you need to do folding movements with an spatula to add the egg whites. If you add and stir the egg whites with a whisk it is not the same thing.
Just a bit of a tip, use a spatula to fold them in. Get underneath some of you mixture and flip it to the top while rotating the bowl a quater of the way around. Stirring with a rubber wisk is not going to get the same results. Love the content though, keep up the good work!

I always use cinnamon, vanilla, and nutmeg in my pancakes. The cinnamon makes them brown but delicious. The thick Japan pancakes are interesting. For me, blueberry topping is where it's at.

Pancakes will form bubbles on top when they are ready to flip.

Why dont u measure stuff ? Haha also when u wanna get lemon zest u shouldn't use as much pressure when pressing against the grater. Just barley press it against it or it will make a bitter taste.
