  • In this video, I am going to show you how you can make delicious fine-dining chocolate ice cream at home. This is a very easy recipe I learned in a Michelin star restaurant in the past, so I hope you will like it.
    Chocolate ice cream recipe
    - 250ml of milk
    - 60g of egg yolks
    - 40g of chocolate 40%
    - 40g of chocolate 70%
    - half of vanilla
    - 8g of corn starch
    - 50g of sugar
    - 1g of salt

    Doubled the ratios and my family still absolutely decimated this recipe. So good! We were looking for a substitution for a creamery out of state and boy did this deliver!

      I don't prefer any special brand, it can work with any nice chocolate, just don't use any super cheap.

    What type of milk is this, full milk I assume? How much percentage of fat? Also is powdered sugar necessary or would granulated be fine?

      Blend the ice cream in the blender, not perfect but nothing is much better

      @@ChefMajk will freezing the icecream a couple of times, while blending it everytime after we freeze smoothen out it ? Some what similar to homemade sorbet ?

      @@pratikbhingarde4603 it never will be perfect like from a machine but can be close if you blitz it properly and fast

    2 questions : can make this recipe with only dark or milk chocolate? and if so, how many grams should i use? also, can i replace the cornstarch with a combination of locust bean gum and inverted sugar?

      Yes, you can do it with one chocolate but the combination of both is best for the taste. Same grams. But I am not sure about locust bean gum, I never use it in the ice cream recipe.

      just leave the cornstarch out, just egg yolks is fine

      It is guzzanti brand, but these machines work similar all of them

      Freeze the ice cream and then blend it inside the blender. It is not perfect, but that is the second best option.

    I just don't understand its ice cream balance, it doesn't make sense and it feels too umami on the palate and as you can see from the video it has no texture and is not well tied.
