I’ve made a few of Claire’s recipes….each time I finish, I usually say out loud. "I can’t believe I f***ing made this!" She’s the best at what she does.
I used the same recipe a couple of months ago, mine didn't turn out as perfect as yours, but the way you celebrated your first croissant in the end of the video was exactly how I celebrated when I was eating my first homemade croissant 🤭🤭🤭

i’ve never considered making croissants myself so i guess i’ve never imagined it would be so challenging. maybe part of that comes from using croissant doughs from a can. i completely forgot about the lamination process and now that i’m thinking about how tedious the steps would be; i feel like saying good luck before i even finish the video lol! i have faith in you emmy!
I think the hardest part of a croissant is just the patience to not melt the better. the dough is easy to work with, they're just nearly impossible to make if your room temperature is rather warm
“Croissant” dough from a can is normally just crescent rolls which have the final rolled shape but none of the amazing buttery layers that real croissants have
I made my first puff pastry last week. Could not believe how much better it was to store bought. So worth the work. Now you have ne wantingvto make these too. Love your videos.
Shaffitz’s recipe is the best! I took a class in baking croissants in Paris and every time I bake them and Pain au Chocolat, I watch her video and use her recipe. My husband is taken back to his home of France every time I bake these! It’s the best! PS: they freeze very well!
These are the most beautiful croissants I've ever seen and I live in France haha. They look so good and buttery and BIG 🥺❤ I never attempted to make croissants myself because I can't bake but now I want to, even though I can find very tasty ones right down my street🥺 loved your reaction to the final result🤗
I just finished making these today after almost 24h of work. I don’t have a stand mixer so I made them entirely by hand and, although I didn’t get the honeycomb structure that defined, I still got the spiral and such a lovely texture. They are absolutely DELICIOUS ! It is indeed a lot of work and even more if you mix the dough by hand, but it is sooo worth it! So, if anyone out there is wondering if you can do this even if you don’t have a stand mixer, you totally can, it’s worth the try! Thank you so much for your videos Emmy, you inspire me everyday and I hope someday I can be just as lovely and talented as you are ♥️

Queen emmy. Used phylo for the first time yesterday. Didnt make crinkle but your video was helpful for my two made up recipes one sweet(apple straw) one savory ( beef, potato and bean) creations. Who knew phylo could revolutionize the casserole. CROISSANTS though. I love how i have to try and make these. Great work. As always thank you. You are the best ;)

Use day-old stale croissants to make almond croissants. cut in half and fill with frangipane. Egg wash, sprinkle almonds on top, and bake until toasted. This is how patisseries makes their almond croissants!

I've done this a couple of times. It's really hard and definitely takes practice to get right. I feel like I'll probably just buy frozen puff pastry in the future. it's amazing if you can do it though.

You should be able to freeze your croissants after rolling before the second proofing process so you can make a big batch and pull them out as you'd like to fresh bake them- great for Thanksgiving dinner in place of rolls, as mini-croissants! Should keep in a freezer bag for 3 months. Bravo on all of the work at home!! There's no way I'd do this in my tiny kitchen so kudos on this!!
I love watching Claire Saffitz' videos, especially when her cats get "involved" in the videos, I do moss some of the stuff she did for BA, but that's in her past now, though I'm sure she still has nightmares about tempering chocolate... :P
