Itachi was never happy while in the Akatsuki. Kakashi has nothing to regret since there was nothing that he did wrong where as Itachi knew that he could have went about doing things differently. Kakashi is still one of my favorites though

It is a huge disappointment. The only explanation I can think of is that it would have been costly and time-consuming to create a whole bunch of character models showing Itachi, Izumi, their children and various others at different stages in their lives.
