    What is holi without the gujiya! Every household gets busy preparing the traditional sweet Gujiya for Holi days before the festival. Gujiya is a sweet khoya filled crest shaped pastry. I think half the excitement of Holi is waiting for the gujiya!
    Gujiya is one of the most popular holi recipes that is enjoyed all over the country. In some parts of the country, gujiya is also known as karanji. The stuffing for gujiya may include suji or rawa and dry fruits too.

    Recipe :
    Gujiya
    Preparation Time: 20 minutes
    Cooking Time: 40 minutes
    Makes: 20-22
    Ingredients:
    2 cups flour
    ½ cup ghee
    1 ½ cup powdered sugar
    2 tbsp desiccated coconut
    2 tbsp raisins
    2 tbsp chironji
    Oil to fry
    Method:
    Add melted ghee to the flour and rub between your fingers till the mixture resembles breadcrumbs. Add very little water and knead to a stiff dough.
    Set aside the dough for 10 minutes.
    Meanwhile crumble the khoya and roast it in a pan over low heat till lightly coloured.
    Lightly roast the desiccated coconut. Add the chironji, raisins, desiccated coconut, elaichi powder and the powdered sugar to the khoya and mix well.
    Break the dough into lemon sized balls and roll out into thin puris.
    Place the puri in the gujiya mold and add 1 tbsp filling in the center. Apply a little flour slurry or water to seal the gujiya. Press over to seal well.
    Heat at least 3” oil in a pan. to low hot oil, add the gujiyas and fry over low heat till lightly golden in colour.
    Remove and cool completely before storing.
