  • Ingredients
    Fish fillet
    Potatoes
    Ripe plantains
    Butter
    Milk
    Olive oil
    Green spinach
    Pepper
    Salt
    Blackberry
    Preparation
    - Peel off potatoes and plantain. Boil till soft. Strain and allow to cool.
    - Mash up once cool. Add butter and milk. Mix to taste. It can be very smooth or chunky.
    - Add oil to the pan on high heat. Add the fillet to the pan and fry the skin-side of the fish first. Ensure fish is pat dry before frying.
    - Add butter and reduce the heat to medium. Flip to the other side after 2-3 minutes.
    - Continue to fry on low heat. Once it’s fried, bring out as serve hot with mash, steamed spinach and sauce.
    - To make the sauce, add black berries into a pot on low heat. Stir and melt on low heat. You can add little amount of water if you want it thin. Serve with dish when berries are melted.
