Hi there, unfortunately if this happened the most likely causes is that the incorrect ingredients were used or the mixture either wasn't mixed enough, or was over mixed. Full fat cream cheese and double cream with a high fat content (ideally 48% fat) must be used for the cheesecake to set. Also if you increased the amount of Baileys/irish cream, that would also make it not set. I hope that helps

For the base? I used digestive biscuits. I'm from the UK, I believe graham crackers are the US alternative.
