Dear Chef, We must be telepathic. This morning I noticed a butternut squash in my vegetable locker. It's been there for months, I think I had planned a curry with it. Today I was going to make a prezzamole and fagioli soup but I had some leeks, no carrots so I used the squash to make a rich creamy soup. I whizzed it up and added cream with cayenne. I'm going to start this evening's meal with a liquid aperitif first.

I have a tip for you! I have been baking acorn squash with butter for years and this is the way you can cut it in half. First I use my chefs knife so no sawing is needed. Take a slice off the bottom so it will sit flat on the cutting board with the stem is pointing up. Angle the blade slightly beside the stem so the finish of the cut will be somewhere off center at the bottom, start the cut by moving the knife in a rocking motion while pushing on both ends of the knife and once you get the cut started it is very easy to finish the cut. Seriously try this it works like a charm. Use an ice-cream scoop to remove the seeds. Once you do a few it gets easier.

I made this along with the Jalapeno Cheddar Cornbread and took it to my mother's house. She poured the soup over the cornbread and devoured them both along with some of the maple bourbon. 😃 Chef, you are an inspiration!

The seeds can be roasted the same way as pumpkin seeds.I would suggest flipping the squash halves into a bowl and scooping the cooked flesh out.I have grown and dealt with alot of winter squash.Kabochas are real beast to cut.This looks delicious.I will have to get stuff together and try it.

made this today. usually i use kabocha squash but this was spectacular. i didn't realize that i was out of sage so i subbed margoram. i also had to use apple brandy at the end and it was brilliant. my other sub was yogurt for sour cream and it was also friggin' brilliant. it did take all day, but now i have soup for 17 years in my freezer! Bless you chef for all that you do to make this hard world a yummier place. you warm my heart.

This soup with a good crusty bread sounds heavenly right now.
Squash seeds great for a lot of things!! They are nutritious and delicious, roasted for about 25-20 minutes at 375-400, with salt and olive oil.

I read the title as "acorn _AND_ squash soup" and was fascinated how you were going to incorporate those two together. I've done things with acorns before. They only really shine as an ingredient when they're made into flour.
