    I canned hamburger up a few months ago and one day we were super busy for the day and I opened a jar of hamburger meat and got my diced peppers out of the freezer that I prepped and bam tacos in 5 min. I need to can some more up!

    I grew up in MI, now another state, and BOY do I miss the whitefish! We live in a very tiny house. Although I have 3 small chest freezers mostly for meat, I'm thinking of defrosting some of it and canning it to make life easier when time is short. You gave me inspiration! Thank you!

    Leisa I canned my rotisserie chicken today and it came out great. I deboned it, made a great broth from the bones, strained it and put my chicken back in the broth for canning. 14 pint jars and 2 pints of clear broth. So now I am canning my pork butt tomorrow. I will have a stocked pantry and having an awesome time doing it thanks to your pantry videos and Canuary.

    WE canned bacon hoping to be able to fry it like we do when it comes from the fridge. Nope, the texture is really crumbly. Soooo instead of being frustrated I decided to crumble fry it and made a potato soup. Best soup I have ever made. The remaining jars will be used for crumbled fried breakfast burritos, baked beans, soups, scrambled eggs, bacon gravy…..all kinds of good things that don’t require I have bacon in the freezer or fridge. And I won’t have to use the parchment paper step because I will just put the slices in the jars on top of each other, thus eliminating all the folding and rolling. Its all good and I love my potato soup today. Of course I will still have bacon in freezer for BLTS…..CAN’T CRUMBLE A BLT!

    I received a wonderful gift from a friend who was cleaning out her freezer. She gave me 2 large roasts about 4 lbs. each. I defrosted them, cut them in big chunks and pressure canned 8 pints today. They are so beautiful; can't wait to try one. For dinner today I used one of my pint jars of stew meat. I made a brown gravy, added the meat and simmered. Served over white rice and with a broccoli side. So good and so easy. Thank you, Leisa. You were my inspiration to start canning. I use my ugly chicken when I make jambalaya or arroz con pollo. Yum!

    I admit that my canned meat is a great time saver to get dinner on the table, but gosh, it is such a money saver. I buy rump roasts and sirloin tip roasts on sale (2.98 instead of 5.99) and cut them up in big chunks and can. Opening a can of my potato chunks and adding onions and spices and you have a great homemade meal in 15 minutes or so.
    I use to cut my chicken up in small chunks and can but I didn’t like the consistency when making chicken salad. Now I can the whole breast (sale price 1.29) on the bone and it is so much nice. I can take the chicken out of the jar and add bbq sauce and broil it just long enough heat it.
    Also, I started canning a lot of meat in half pint jars. It is the perfect size for a couple open face roast beef sandwiches, tacos, or fajitas for lunch.
    My grown kids appreciate the canned meals, too.

    I have been dehydrating and water bath canning. Two weeks ago I bought a 22 qt pressure canner. Since watching canning meat videos it has made it very easy. Thanks for your videos. I read all the comments and that helped also.

    This Summer was my first time canning meat besides tuna that I do most every year. Last year I was blessed and my daughter canned all of our tuna. So I canned our venison and a big slab of beef we bought from our farmer friend who we buy our beef from. Took me two days but got over seventy pints combined, getting ready to can our homegrown chicken and really want to try the ground beef! While I don’t work outside the home anymore I am very tired at the end of the day and this is so convenient! Thank you for all of your helpful info. ! Really enjoy your channel.👍👍👍

    We Loooove canned moose. 90mins raw cubed stew meat cuts. We throw jalapeno or serrano garlic you can flavor them however you want. No water added. My husband loves them just microwave couple seconds drain juices throw in bbq sauce heat a couple more seconds and eat like pulled moose sandwiches. So simple soooo yummy.

    I love canning roast beef. Makes a quick roast with veggies. I also make Italian beef and can it. It is a quick sandwich meal. I do chicken and corned beef. All are so good.

    Regarding canned venison for tacos, my mother has always fried up the canned venison with kikkoman's teriyaki and then we have it on greek flat bread pitas and put your normal taco toppings like lettuce, tomato, onions, sour cream and your choice of cheese. I like mozzarella or monterey jack on it. They are delicious.

    Ham broth is such a great thing to have on the shelf. It adds a pop to so many dishes!
    White fish is amazing as fish tacos.

      Yes when I make pinto beans I saute an onion in bacon fat and use a quart of ham broth and everyone gobbles it down!

    After I cut the meat to fit the pint and a half (asparagus jars), I sear all the sides, drop it in the jars, mix up a big batch of au jus fill to 1” and pressure cook. It’s SO GOOD for French dip sandwich.

    I make smoke corn chowder by using Mississippi Pork roast that the pork butt was smoked before canning. It is amazingly good!

    Cold chicken casserole on purpose. Your favorite pasta cooked off and chilled. Chilled canned chicken. Mix up your favorite summer cream sauce, chop, bell peppers, sweet onion, fine chop carrots, quarter grapes, and whatever chopped veggie, firm fruit fiber you like. Raisins too. Seeds.... Chop nuts of choice as ",crispy" top. Drain and chop chicken the way you like. Mix everything but the nuts until well coated. Cover chill at least an hour. Sprinkle with nuts as you dish it up. Great for this well above average not summer supper or quick snack or lunch. I like it in a fresh cored tomato with toast.😋

    I bought a spiral sliced ham at Aldi's. I separated fat from slices and rolled 4 slices tightly together and stuffed it in a wide mouth pint jar. added some chicken broth, lid band ring processed for 75 min. Looks wonderful. Got 10 pints plus will bake up the chunk left over for supper tomorrow. Worked great! Would love to get some salmon. Our boats not big enough for Lake Michigan!

    Best thing I've ever had from canned salmon is a salmon dip. Pint of canned salmon, block of cream cheese and seasoning I use a full mix some people ass some hot peppers to their canned salmon for a zip and if you want add a small can of salad shrimp to the dip.

    Meatloaf and hamburgers are the only thing I can think of that we eat regularly that I cant make with my canned ground beef. And you forgot to mention one of the most important things to make with ground sausage - biscuts and gravy! Love your videos. Thank you.

    I made chimichangas with my canned venison the other night, and it was delicious! I just mixed it in a bowl, with some of my home canned salsa, shredded cheddar cheese and some seasonings. I also use my canned meats for enchiladas, I put it in gravy and put it over potatoes or toast, I make stroganoff's with it the list is endless.

    Chicken Tetrazzini would be my pick for the chicken or turkey. My recipe calls for 5 cups of cooked chicken or turkey...this would be perfect for canned chicken. I am just learning how to can, so I am gathering some great ideas. Thanks for all that you do.

    I have more pot roast canned with onions, than any other thing I have! Oh it’s awesome. Throw in my canned carrots and canned potatoes, what!! You will lick ya plate!

    I cooked slices of chicken on the stovetop, added a can of tomatoes and some chicken broth. Canned this in quart jars. When you want to use it, get some Marsala wine, shiitake mushrooms and add the cooked chicken chunks to a pan. Cook them together and then thicken with cornstarch and serve over pasta. Delicious.

    I have canned the very small cocktail shrimp and then i use them in an appetizer that can also be used as a snack and is quick and easy to make. I also use the small cocktail shrimp in place of crab meat in another appetizer recipe and it also works well and again usually ends up a snack instead!! It makes a very nice dip you can use with melba toast or other cracker/bread and even works with carrot and celery sticks. Peppers go well with it also. I just keep finding usess for it but again...YUM!!

      Yes, soy is added to most tuna. It really adds to my inflammation with rheumatoid arthristis.

    We do the same thing with our New York strips last one we bought it was 2.49 a pound paid 45.00 we ended up with 12 steaks that came out to 3.75 a steak about
    1 1/4 thick can’t buy it for that already cut up in the store. Me and hubby normally split a steak could potential be 24 meals.

    Two easy recipies I use canned meat in are, a casserole anyone who can boil water can make (great for introducing children to cooking). Ingredients, 1 pint any canned meat, 1package frozen veggies (or canned or fresh), 1onion diced, 1 package noodles, 1can any "cream of" soup, shredded cheese. Cook the noodles till almost done,while that is cooking mix everything but the cheese together, drain and mix in the noodles, spread in a 13x9 pan, sprinkle cheese on top, bake at 350 till cheese melts, serve! Other use for canned meat (I especially like corned beef for this) is sandwich spread.

    I use canned beef, I shredded it and ad add taco seasoning, it's good for tacos, warm and brown gravy serve over mashed potatoes, beef pot pie, beef enchiladas, beef canned veggies make stew.

    Latin American countries have a dish called old clothes (roba vieja i think it’s called) that varies slightly country to country. It involves shredded cooked red meat. Also chicken tinga is shredded meat. The point is to stretch protein. Delicious.

    Aldi sells marinated Mexican seasoned chicken thighs. I buy those when they're marked down and put them in a white chili with my home canned white beans.😍
    I made tomatillo salsa Verde and used that in the chili too.

    I agree so much with you having canned goods, especially meat, is so great and when you start using it you realise this. I missed not having chicken on my shelves but I now want to do other things wanna try some mince meat (ground meat).

    Well said! I love canned meats. The only one I haven't had luck with was bacon (soggy). But I use my canned meat in everything. For a healthy recipe option: try putting some flaked fish over cubed potatoes and serve with a bacon vinaigrette. It's delicious with a side salad. Great vid!

      I have found canning the “thick”bacon works better. The regular kind of falls apart easily.

      We add canned bacon to ground beef for amazing hamburgers, and we add it to all meat chili. It can also be used as part of a hash.

    I do both hot pack and raw pack for meats, depending on my planned uses for them. I just hot packed chicken strips a couple of days ago, as well as hot packed cubed chicken. When you carefully remove hot packed meat that's been done in strips or chunks, you can actually use them breaded for fried chicken or any other fried meat, or as a "roast", or go ahead and shred them for other recipes. Since you are on low carb, you might not want to do fried chicken strips in that manner. For my roast, I use my home canned potatoes and carrots, reserve all the liquids and make gravy with that, and heat it all together in a pan on the stove or in the oven. Sunday dinner roast beef and veg in minutes instead of hours!

    Hi Leisa, thanks for all your info on your canned meats and fish. Very versatile and handy in a pinch. Pot roast is good to can, like a full meal. You are so informative that helps preserve good food, and save money and handy.

    The shredded venison is good with a gravy over biscuits or rice, or mashed potatoes. I used my canned chkn and made homemade chkn nuggets.

    I love that you did this video. I just never use tin-canned meat other than tuna but I am sure canning as much meat from the freezer as will work. We've got two chest freezers and that is just too much food for the two of us so pressure canning is helping me make a dent in it. My goal is to get rid of one of them before the year is over. I have two paper grocery bags in the freezers filled with trout and bass that hubby catches but he's the only fish eater and even then...not very often. I'm hoping to convince him to smoke a bunch of it and then I'll can it and maybe if it is a convenience food he'll eat it more often. Sure wish we enjoyed salmon patties because I'm sure the trout would work for that too. But....blech! Lol But again, thank you for this video. I'm having a hard time convincing hubby this is a good plan so you've been a big help.

    Thanks for the information. I canned meat a few years ago. We ate the chicken but just could not eat the ground beef or the pork. The dogs were very happy. When one of our five freezers went out last week, we had to can up some meat. I made soup with some of the beef.... it was wonderful. I have not tried the ground beef yet. I watched another of your videos and you asked what things we caned. I have canned broths, beef and chicken. I also canned French onion soup. I make something called cowboy candy with my peppers. People love it.

      I found canning boneless meat (chicken and pork specifically) just isn’t that tasty. I now can pork chops and chicken breast with rib meat and it has so much better flavor.

      I didn’t like just hamburger in broth, but the seasoned ground beef in Ball Blue book is good. Works well heated with taco seasoning, chili, shepherds pie.

    I was thinking of making some quasi Hawaiian pork ? Cube the pork meat and pack it in and add some jalapeños with crushed pineapple . Ugly chicken is on our horizon now 😁

    I've used store bought canned chicken to make enchiladas and also orange chicken stir fry but I bet home came chicken will be better. My first home canned chicken, i added garlic, ginger, soy sauce and a pinch of cilantro. I'm looking forward to tasting it but don't want to open a jar yet

    My freezer died a couple of weeks ago so I canned everything. Now need ideas to use it all lol. Thank you for the video. Definitely will try beef and broccoli alfredo and a shepherds pie. I also need to rework my head as for the last 12 years I’ve batch cooked using 1kg of meat and then portioned it into containers to freeze, but now can’t do that either so need to try things using 1 pint of meat so I can put leftovers in the fridge and use them in a reasonable amount of time. Planning to move soon so will wait until I’m in my new place to get a new freezer as my dining room looks so much nicer without it lol, and because it forces me to use the canned meats and learn some good recipes with them.

    I just love my pot roast canned. In the time it takes to boil water I have roast with potatoes and carrots, yum! I also put some in small chucks for veggie soup or noodles. I've never canned ham but I have heard it taste fine but it doesn't taste like ham and it loses the texture.

      I am really looking forward to canning pot roast. Interesting about the ham..... i'll maybe have to try just a small jar to experiment.

    I like to look through old cookbooks for new to me recipe ideas. I learned from a 1940s cookbook how to make chowder, which is a cream soup with Any meat in it and veg to your liking. I was surprised at how good a chowder with shredded pork tasted.

      Fish Chowder is found in the soups section on pg 184. It is the description of chowder on pg 176 that gave me the idea to substitute pork for the fish.

    In the Hispanic section of the store there is a Knorr Sopas in fideo, stars, or elbow macaroni mixes. All you do is add 4 cups of water bring to a boil then simmer for 10 minutes. I add a jar of my shredded ugly chicken its delicious! The Knorr pasta at my Walmart is $0.57 a packet! Its economical, delicious and serves four! Add a half a sandwich or whole if you're really hungry its a complete meal!
    I do the same with the beef just add it to the Knorr Sopas!

    Leisa, I'm catching up on a lot of your old videos. Really enjoying your "after" opinions on canned meats. I had heard comments that canned, ground beef stunk. My friend gave me a sample and I loved it! The aroma reminded me of canned, corned beef and was totally delicious. Thanks very much for sharing. (:

      Canning ground beef is great. I have found it to have a mushy texture but I found a solution. I dump the meat in a frying pan and cook it more. It helps to dry it up and get browner. I use mine mostly for chili, tacos, fajitas, nachos bell grande, spaghetti sauce, putting on homemade pizza, sloppy joes, and more.

    Home canning was for winter storage of foods for up to two years/seasons. It may last longer but not recommend. The jar seals don't last.

    I did some beans with ham but I have not had any yet. Keep thinking I am going to but I want cornbread with it and I haven't done any yet. I also did some meatballs. Some in the spaghetti sauce and some just in broth. I have some venison and some pork. I have done some sloppy joe meat but that is all gone and some vegetable soup with ground beef. It is wonderful. I have to get back to it after Christmas is over.

    Going through videos to try to get inspired to can. Ain't that a shame! But when I can roast I use chuck roast. Yes it's has more fat in it but the final product is better. I canned up arm roast and it's tuff. I precook and make a broth with beef base and it was so tuff we couldn't chew it. I shred it and put noodles in it or make veggie soup and it's still tuff and quite tasteless. HAPPY CANNING!

      I don't think I would have tried this...shrimp cooked more than a couple minutes is tough as heck. But thanks for confirming this sorry for the waist of the shrimp

    You left out turkey. It's on sale dirt cheap at least twice a year. Even in Canada I can get it for $1 a pound. I like to debone it (needs my bone broth) and grind the meat (you can only eat so much roast turkey) and make sausage. A jar of Italian sausage and a jar of my killer tomato sauce - ready before the pasta cooks. Bierwurst or kielbasa with a jar of beans and maybe some sauerkraut. Breakfast sausage casserole. Even just can the turkey. Great for soup or stew.

    a can of ground beef, a can of tomatoes, 2 cans of kidney beans, a diced onion (or dehydrated flakes!) with chili powder, cumin, cayenne, salt a pepper. About 4 healthy servings of child in no time. I can 1/2 pint jars of pork and ham (diced fairly small) and use them for fried rice.

    When I was growing up, the pressure cooker had not yet been invented! So, meat was not canned at all! Just veggies and fruits! Hey, it was a start! I am so glad I live in the his time so I can can meats! I have a lot of it on my shelf for SHTF! I buy meats and put it in my freezer; then when it is full, I go to town canning it all up.
    Anybody have any good ideas for canning meals in a jar?

    I love to make a huge batch of Pork Chili Verde when Pork Loin goes on sale and then can it up in pint size jars. I use my home canned diced chilis as one of the ingredients. When it's time for dinner, all you have to do is serve with flour tortillas, cheese, sour cream and maybe a salad, Soooo good. My husband likes to take it to work for his dinner. He will either just open the bottle, reheat and eat it with just tortillas or he will have me pick up the really wide tortillas and he will make a burrito out of it.. basically, it is a whole meal in a jar.
    I would like to learn how to can bacon. Not the kind that looks like a huge gelatinous mess in the jar, but the kind that I have seen where it is fully cooked, wrapped in parchment and canned. I am relatively new to pressure canning so I would like to try other recipes as well. I did try the roast beef recipe from Linda's Pantry and it was pure heaven in a jar. It proved to my family that canning meat is a do-able thing. The one thing I did try that we do not care for and will probably not try again is chicken. For some reason it tasted an awful lot like fish, I am not sure what we did wrong. Thank you for your video, I have learned so much from you ladies in the past two years and I am forever grateful. ~SuzyJCinColorado~

      Can chicken on the bone. So much more flavorful.
      Also, if you can bacon on parchment paper, use the thick bacon. Thinner bacon just wants to fall apart.

    Shredded meat tacos are the best! You can take the meat and put it inside of the shell of the taco, and fry it that Way in hot oil. Delicious!

    My favorite is smoked salmon canned. Smoked chicken, smoked pork butt, smoked sausage, smoked anything is so full of flavor and so good canned. My next experiment is smoked cheese and waxing it.
