    I really like your channel. You explain the cooking tectonic very clear. That says you have a good understanding of Japanese cooking, flavour combinations and you probably is a sensitive person as well with an eye in details.

    Very good.
    My hardwood store has sliced Olive wood burls...unfinished, about 3 inch (7.5 cm) thick, and about 24 inch (61 cm) wide, that I could seal with a good semigloss polyurethane varnish.
    This would be a great large sushi/sashimi serving platter.....or a cheese or appetizer platter.

    Chef, I've heard that wrapping the raw fish in kombu removes the extra moisture and firms up the fish, it also gives it that umami flavor. Do you practice this as well? Also, how do you cure salmon for sushi consumption?

    +How To Make Sushi,
    Hey Davy, keep on going with the great videos! Just a quick tip.. when you cut lemon or other citrus/acid fruid cut with serrated knife so you don't damage the blade of the knife! They are too acid for that type of blade of knife and you don't want to damage an high end knife like that!
