I made these tonight and they were fantastic! Excellent taste, texture and consistency, far better than any store bought vegan sausage I've tried and much cheaper.
The rolling and steaming part was a bit time consuming but I can't see how you could skip it and still get the same result.
Will definitely be a regular in my house now.
Looking forward to trying some more of your recipes.

Really good idea , it left a lot of room to add/mix it up with whole grains and other nutrients, I always do with these great recipes, just one thing, burning vegetables can form carcinogens like benzopyrene, which is found in larger amounts in cigarette smoke. Be careful burning or charring some vegetables. Great work. Really great recipes, thank you so much.

I would imagine any kind of oily "nut" (peanuts and cashews aren't true nuts but we label them nuts) or oily seed could be substituted for walnuts.
Walnuts are fairly oily and fatty, so probably pumpkin seeds or pistachios wouldn't be oily enough.

Very interesting recipe. I wonder if it is possible to skip the aluminum foil. From and environmental point of view I'd like to use fewer resources.

Soy sauce is usually not gluten-free. Some are, but most have wheat as an ingredient. It should be assumed that any given soy sauce is not gluten-free unless the labeling specifies otherwise (and even then it's kind of a toss-up, but that's another discussion).
Oats are technically gluten-free but very prone to cross-contact. That's why there's a distinction between gf oats and regular oats in the market - the gf ones are prepared and tested to minimize gluten to below a certain limit.
So I wouldn't advertise the recipe as gluten-free without a warning about these things.

Hi "Blueberry Oatmeal"! Have you even checked the recipe in the video description or read my blog post? Probably not because it clearly says "oats (gluten-free if needed)" and "tamari or soy sauce or coconut aminos". So yes, my recipe is 100% gluten-free.

I like recipes without vital wheat gluten bc then I don't have to steam it. Which I don't have a steamer. I'm not gluten free just easier not cooking with vital wheat gluten

After I combined all of the ingredients, the sausage "meat" was very sticky, nothing like what your's looked like. The recipe said to add more oat flour. What oat flour? the ground up oats with the walnuts, or an actual package of oat flour? Assuming you meant the ground oats with the walnuts, I I had to clean out all the ingredients from the food processor, wash the food processor, then put in more oats and walnuts, grind them up and then add the sausage meat back into the food processor and pulse again. This time it was drier, but still a little sticky. I decided it had to be good enoug, because the amount of time to do this was getting ridiculous. I used 1/3 cup portions for each sausage and got 7, could've gotten 8. You never mentioned what size they should be rolled out to. I put on a plate and placed it in the refrigerator. Much more involved than what your video suggests. Plus, I was not expecting success.
A real pain rolling the sausages in parchment paper and tin foil. You never mentioned what the size of the pieces should be. It was difficult to roll the parchment paper tightly. I finally decided it was easier to roll the sausage in the parchment paper separately, then roll it in the tin foil. Steamed them for 35 minutes as you said. Then unrolled them and then had to fry them in the frying pan. The pieces looked good, but when eaten they were crispy on the outside but soft and mealy on the inside with no juices, nothing like a meat sausage. That was to be expected, I guess, but they weren't good.
Given that it took about 20 minutes to assemble the ingredients, about 10 minutes to mix everything so it wasn''t stickly. A wait of 20 minutes in the refrigerator, 35 minutes steaming, and then 10 minutes frying, it took about 1 1/2 hours to make the sausages. Given the taste, I'd never bother doing this again. Sorry, I wanted to like these, as they're healthier than eating the Beyond Meat sausages. But, unfortunately, imao, it wasn't worth the time nor the effort.
To all of you posting comments about how good they look, did anyone else actually make them?

    • @ElaVegan
      @ElaVegan  2 роки тому +9

Sorry to read you didn't like them and had problems making them. To answer your question, yes, so many people who commented on my blog actually made them with success (you can read through all comments.). Also, people on IG keep sending me happy messages and photos. I wish I could be more helpful, but without being in the kitchen with you, it's not possible, unfortunately. Maybe the beans were too wet, or you did over-process the mixture, then it becomes mushy.
Of course, you cannot compare them to real meat sausages that contain tons of (unhealthy) fat and many other unhealthy ingredients. These are so much healthier, and therefore it's a bit unfair to compare them with store-bought versions or even real meat. :)

Why do supermarket vegetarian processed foods contain so much fat per 100g serving and very little protein? I went back to eating fish and chicken after reading the Nutritional Fact labels of many V products.

This is NOT gluten free. Soy sauce is made from soy and wheat. One can buy gluten free soy sauce or use tamari instead. Also, barbecue sauce is often not gluten free.
