I've used Russell fittings for decades and when I opened the EE fittings I thought they were made of plastic since they were so light and honestly cheap feeling. Since I have fuel injection I reused the 20 year old Russell fittings and only use EE for crankcase ventilation on a catch can. I guess 6 psi of fuel pressure would be safer than running 60psi but if it were me I'd use higher quality fittings even for a carb.

Well, there is no question Russell fittings have a great long standing reputation, so I can't knock you for staying with them. That is interesting about the weight difference. I may have to get a few Russell (and maybe a few other brands) fittings to compare side by side out of curiosity.
I'll definitely keep an eye on the condition of the fittings over time. As you mentioned, running carb applications I'm not taxing them with much pressure at all. I do know that aluminum fittings in general can be crack prone when over tightened or when stressed with excessive vibration. So it will be interesting to see how these hold up.
