How To Make French Chocolate Cake ✿ Incredibly Wonderful Chocolate Cake

  • ▷French Chocolate Cake
    Φ15 cm (6inch)
    ▷Ingredients
    ‣Cake Batter
    20g . . . Cake flour
    36g . . . Cocoa powder
    3 Egg yolks
    15g . . . Sugar
    50g . . . Unsalted butter
    100g . . Dark chocolate(64% cacao)
    75g . . . Whipping cream
    ‣Meringue
    3 Egg whites
    50g . . . Sugar
    ▷Bake Time
    Bake at 320°F /160°C in water bath for 30 minutes, Remove the water tray and continue baking at 320°F /160°C for 12-15 minutes
    ▷Storage
    Store at least room temperature overnight before serving, or refrigerate for at least 4 hours.
    French chocolate cake will keep in the fridge for up to 3-4 days.

    ▷Instructions
    1、Mix cake flour and cocoa powder and set aside.
    2、Separate egg yolks and egg white.
    3、Stir together the egg yolk and the sugar until it turns light yellow and slightly foamy, set aside.
    4、Melt the dark chocolate and unsalted butter together in a water bath.
    5、Mix the melted chocolate with the whipping cream and mix well to make the chocolate ganache.
    6、Mix the chocolate ganache and yolk mixture and mix well and set aside and keep warm.
    7、In another bowl, whip the egg whites and sugar until somewhere between medium and firm stiffness.
    8、Add 1/3 of the meringue to the chocolate mixture and fold until combined.
    9、Sift in the cocoa powder mixture, mixing gently. Then fold in 1/3 of the meringue and gently combine.
    10、Add all the remaining meringues, and fold it as lightly as possible.
    11、Pour the batter evenly into the prepared pan, put it on a deep baking tray containing hot water, and bake in a preheated oven at 160°C for 30 minutes. Remove the water pan and continue baking for 12-15 minutes.
    12、Remove the cakes from the oven and set on a wire rack. Allow to cool completely in the pan.
    13、Store at least room temperature overnight before serving, or refrigerate for at least 4 hours.

    Ingredients x 0.67 times, Bake time x 0.8~0.9 times
    15 cm (6 inch) → 18 cm (7 inch)
    Ingredients x 1.5 times, Bake time x 1.25 times
    15 cm (6 inch) → 21 cm (8.2 inch)
    Ingredients x 2 times, Bake time x 1.5 times
