For people who wonder why Hyderabadi Biryani is the best in the world, it is for a few reasons specific to Hyderabad. The type of goat meat we use here (found only in places around Hyderabad), spices from the ancient spice shops in Begum Bazar/around the old city (imported from Afghanistan), the top brand Charminar Basmati rice, the slow cook process in the specific type of wood whose smoke infuses the pot, the kind of Ghee and Curd from the specific cows we get here in every local shop, the use of Kashmiri Saffron, chili powder from Guntur, the water of Hyderabad (yes you heard it right), and the love the Hyderabadi local chefs put into it. A Thumbs-Up at the end. People can make top biryanis worldwide, but not the best Hyderabadi Dum Biryani. With that note, "Habibi, come to Hyderabad for a plate of Dum Biryani". (I'm crying here sitting in Toronto, missing the authentic Biryani back from my home while writing this).

Actually I tasted Hyderabadi Biryani and it's good. But Kolkata Biryani is at same level or more because Nawab of Lucknow took his best chefs to Kolkata and improvised the dish.
Hyderabadi biryani needs salan, raita, Kolkata Biryani needs nothing.
And yes biryani of Lucknow of course is fantastic.
We in hyderabad never use Guntur Chilli powder for sure , this saying is absolutely shit. Everything grown in and around Telangana is used in our Hyderabadi biryani.
I am from kerala and would admit Hyderabadi one is the best. It's the sheer hard work and love for biriyani that sets apart.

You should visit West Bengal and try Kolkata Biriyani from famous restaurants such as "Dada boudi" and "Arsalan"
U can try biryani in shadab and do t forget to try sufiyani biryani. It's tasty yet Suttle flavor. U must try beef kebabs Rumali roti Nd stir fried meat with paper thin Rumali roti. Keep duin the gud work. Also siddique kebabs is best place. 🎉🎉🎉🎉
