    I used to make this at the Gerst Haus restaurant in Nashville Tn. Our method was a little different though. Our Sauerbraten was marinated for a week. While not as popular as Hasenpfeffer or pig knuckles, it was a good seller. We also made a Rohn-schnitzel that had a similar gravy, but without vinegar.

      We loved Gerst Haus. Aren't these the same people who own Sportsman's Grille? How does a place like this, in a great location, with great food and beer and atmosphere, close?

    I would leave out the ginger and add Juniper Berries, Black Pepoercorns and Mustard seeds
    But your Sauerbraten is very good!

    Cutting boards have two side. One with an outside groove for 'wet' ingredients to catch juices and the other side is flat. Why do 'chefs' always use the grooved side for non-wet ingredients (like onions) and not the flat side?

    Sauerbraten is a german dish. How did you know it? Do you have german roots? Greetings from Germany.
    Btw, your Sauerbraten is different from the Sauerbraten I know.
