Chef, your Hyderabadi biryani was perfect. However, with Awadhi biryani I find some problems concerning the authenticity of the style. One of the distinctive characteristics of Awadhi biryani is that when served on plate, the biryani is absolutely clean. Meaning there should be no amount whole spices on your plate. Secondly, while the chicken is cooked. In Awadhi biryani style: milk is added, along with cream. To give body to the jhol. Third, fried onions are also not added for garnishing as happens in the case of Hyderabadi biryani The authentic recipe calls for a different method altogether: In oil, onions are browned. Then chicken is directly added. Ginger paste and garlic water is added. A spoonful of red chilli powder (Kashmiri) is added. Salt is added. Whole spices are added (mace: javitri is the most important). The chicken is braised for sometime. Then curd is added. Then cream. Add some kewra. When the curd is well done. Remove the pot from the stove. Add milk. Remove the chicken pieces. Strain the jhol (it removes the spices and the onions). To the jhol, flavour and fragrance is adjusted by adding Rose water, kewra, meetha attar, ilaichi powder, javitri powder, kesar milk and water solution. From this jhol only you can skim some oil that floats on the surface. That is the rogan. Then again add the chicken pieces to the jhol. Give it a quick boil. Then add, rice.. sprinkle in the remaining kesar-milk-water solution, and the rogan. Sprinkle ilaichi powder all over the rice. Put it to dum or steam.
