It adds a fantastic flavor, as does the red wine vinegar. I am so excited to make it (along with making a homemade loaf of crusty bread to go with it). Thanks, Suzy! I made this delicious soup the other night after watching the video. My husband and I love soups all year round and I couldn't wait to try this one. It is absolutely one of the best vegetarian soups I have ever had! We loved it! The bold flavors and kick from the red pepper flakes is fantastic! I love all the recipes from Suzi! Thank you for teaching us such wonderful dishes for our Mediterranean lifestyle!
I made this soup tonight and aside from me adding a little too much red pepper flakes it was excellent! First time trying lentils and this was a winner! Pairs nice with Red Lobster biscuits!
Pretty much how I make it. I use a Parmesan rind for flavoring. And I prefer escarole to the spinach. But I throw the escarole in at same time as the lentils. I find the longer escarole cooks, the less bitter it becomes.

We're not vegetarians, but I was craving veggie-lentil soup. Mu husband is accystomed to my veggie ventures and liked this. My father who insists that lunch & dinner must have meat, liked it. With a side of chicken cutlets for those two.🙄
Being puertorican black peppers doesn’t give any flavor to our cuisine. We use fresh sofrito onions peppers, celery, carrots, fresh oregano, (recao-culantro) and cilantro fresh garlic, and colorful peppers. And add adobo seasonings, and cumin seeds or cumin powder. That’s what consist my sofrito recipe.
