Mini Pavlova with Lemon curd

- For 6 Pavlova
90 gr egg whites
180 gr sugar
1 tsp cornstarch
1 tsp lemon juice
In a standing mixer add egg whites and sugar and whisk for 15 minutes scraping the sides occasionally, after 15 minutes add cornstarch and lemon juice and whisk for another 5 minutes. Add the mixture into a piping bag and give any form you like leaving the middle part open. Bake at 180*F or 85*C for 2 hours.
Lemon curd
Use the leftover egg yolks
3 egg yolks
1 whole egg
1/2 cup sugar
Zest of a lemon
Juice of two lemons
4 tbsp/ 55 gr butter
Pour all ingredients in a pan and constantly mix on medium heat until butter is all melted and the mixture has thickened. Remove from heat, strain it and let it completely cool down.
Once the pavlova has baked let it cool down before filling with whipped cream, lemon curd and top it with any fruit you like, you can add chopped pistachio on top or any other nut.
