  • Today we're making Queen Daenery's Pomegranate mead! This is a recipe that I got from AleHorn.com (www.alehorn.co.... I am attaching the recipe below if you would like to make this yourself. I must say, this one is amazing and I'm definitely about trying it again in the future. Let me know what you think below and check out the links to support the channel!
    Dany's Pomegranate Mead:
    2.5 Pounds of Orange Blossom Honey
    2/3 Gallon of Spring Water
    1/3 Gallon of Pomegranate Juice
    1 Black Tea (Teabag)
    2 Red Tea (Teabag)
    1 oz of Irish Moss
    2 Grams of Lalvin EC-1118

    If you find pomegranate juice WITH sorbate, just ferment a traditional dry with highish ABV and add the juice on secondary. 🤓

    I want to make a pomegranate wine sometime. Pomegranate by itself, I think, has a very full bodied taste and mouth feel. Almost like a red wine without alcohol.

      I have made a dark chocolate pomegranate wine with the dark chocolate just enough for a little hint but the pomegranate dry is amazing! Definitely make it.

    You try this recipe with lalvin BM4×4 it produces alot fruit esters or try it with lalvin K1-v1116 which produces alot of floral. I think it would be interesting to paly around with different yeasts for this recipe

    It's funny, I have a GoT named mead that was named after I brewed it. 1 gallon, primary is 4lbs strawberries, 3 lbs honey, 4 chopped ghost peppers, a handful of cracked black peppercorns and D47 (nutrients, pectic enzyme, etc). I have decided to call it "Dracarys.

    Tried this recipe December 2020. Just got around to bottilng it today, about a year later. It came out pretty good. I may try again with a bigger batch.

      @@ManMadeMead This is the first round Ive ever bottled, so I’m not quite ready to try tweaking the recipe given how well it came out. Ive done Sansa’s mead too and Im planning to do a bigger batch of that one first as it was my favorite of the two.

    Ive got a vanilla, blueberry and plain mead in secondary atm. Looks amazing and smells crazy good. Been in secondary 50 days will probably leave it another 50 before bottling. The primary reason for the brew was for a wedding gift so looking for really nice bottles. There will be extra for personal use ;)

    That sounds really good! I just mixed my mixed fruit mead with my elderberry mead. OMG! Best thing I’ve made so far. I added other herbs & spices into each. I’m blown away how good this tastes being 2 weeks old! I’ll try yours next 👍🏼

      @@jeanmartin6410 No. It didn’t taste quite as good as the blackberry, raspberry, blueberry, but combined, it improved the flavor overall.

      @@jeanmartin6410 Just to be clear, I added several other herbs into that mead. Hawthorn, Chamomile, Ginger & Lavender. But, I wanted to tell you, I used 4.4 ozs of elderberries in primary & 1/2 cup in secondary. I’m curious if you used more than that. Mine wasn’t bitter, but discordant initially. I don’t know how it would’ve aged out over time because I chose to blend it.

      @@GreenWitch1 I did everything wrong with this brew. It was my first and I just thought, “Hey, why not??!!” With that in mind, I used elderberries I had left over from jelly making. I’m guessing there were about 1 1/2 - 2 cups of elderberry/ pectin/ sugar.(So, wine, not mead) I threw it all into a one gallon carboy, with, gasp, bread yeast, about 2 cups of sugar, ( Didn’t know ANYTHING about making wine or mead, except that it occasionally blew up. Long story...) and filled it up with water. It made wine, but, really, really , really sweet. And bitter. So, I asked on u-tube and someone suggested carbonated water to thin it down. The thing is, I harvested about two or three pounds of elderberrys. They are in my freezer and I’d like to make more wine, but not if it has that bitter taste to it. I have bottled it and it’s in my refrigerator now. I’m hoping it will mellow with age. Any way, thank you for your response and for reading ALL the way through this,(if you did). Any advice on my next venture into the elderberry alcohol venue will be greatly appreciated.

    I think you should do some more research on using your hydrometer. Alcohol has a much lower gravity than water. Water is 1.000, but alcohol is about 0.070. this means that when fermenting, the gravity can go below 1.000 before it is done. Most wines (including meads) will not stop fermenting until either the yeast has reached it's tolerance or run out of food (sugar). That means at "dry", the hydrometer will give you a 0.995-ish gravity (unless there are enough fermentable sugars present to push the gravity to 1.000 or higher). Just a tip.

    I followed the recipe and after a week I see no activity with the yeast. Used new yeast. Is it stuck? How can I get it moving. Thanks!

    From your other videos, I don't think you usually boil the honey before you add it to the must unless you're doing a bochet. Did you notice any significant difference in aroma or the final product from boiling the honey this time?

      Boiling the honey into water wont caramelize it. It might cook it a little but bochet is only honey in the pot cooking.

    This sounds good. Might have to try that. I might have made a mistake by not degassing, but I did put my bottles in the fridge, that should stop any additional fermenting huh? will degassing also get rid of a slight stale beer smell?

      That should stop additional fermentation! Degassing just keeps from possible carbonation!

      Just fair warning, don't put it in the fridge in a tightly sealed container unless you're completely sure fermentation is complete. Dropping the temp will definitely slow additional fermentation, but if it's got a long ways to go, it can and will continue to ferment, albeit slowly.

      You can use it in the rehydration or during the primary!

    How long can you age in the secondary rack before having to bottle,
    Will , or can the air space be an issue?

      You age for as long as you want in secondary! I would just try to have as little air space as possible.

    yo Yo YO! What happened to oxygenation?! I have a brand new air rock and pump and want to use it. Lol
    Probably would have a quicker fermentation time with the oxygenation. Just sayin.

      You can definitely oxygenate these! I just didn’t in this case haha

      Blend your honey in a Vitamix blender. Oxygen issue is solved. Doesn’t add much time in process unless your going 10 gallon plus.

    Please reply to this, I made my first batch of mead last night had fun doing it to, but the lids on my buckets do not seal they do not lock they just sit on top is this right should I duck tape them shut will my mead be waisted Thanks
    I am confused 3 buckets and they all are the same

      Honestly, you just need to open the mead every once in awhile and see if there are a bubbles popping at the top. If so, then your mead is fermenting! You can do the duct tape thing, but you’re going to have to do it every time you open and close it, which would be annoying to me!

      @@ManMadeMead Thanks for responding my gal jug is doing wonderful the airlock is going to town, but the 6.5 buckets not 1 air lock is bubbling the buckets I got is the same as yours I went to your web sight and ordered straight from there., so ok I will open it up and look inside if for some reason there is no bubbles can I give them another pack of yeast or should I pour it out and thanks again for taking the time to help me just thanks for every thing

      Buckets are not dependable. They allow to much of a possibility for air to enter. Air is the enemy. Glass carboy only.
