Katakuri can see 5 seconds into the future with adv observation haki (also known as future sight) which is how he knows everything Luffy is gonna do before it happens,like where he says “that looks interesting” before it even happens. The only counter to that is speed,and snakeman focuses on that. Also Kaido no diffs Katakuri,and the Luffy that fought Kaido,even in base,low diffs Katakuri also. Luffy has gotten stronger after this fight by a lot.
For perspective Kaido is a yonko and katakuri is the first mate of a slightly weaker yonko. Luffy needed gear fourth snake man to finish katakuri, but he needed gear fifth to defeat an already weakened kaido.
