Yes to trimming the wicks!! You get a more controlled flame and as a result you get a more even burn of the candle. It also lasts longer! Trim to a 1/4 inch! Also I’m not in charge of Thanksgiving dinner and I feel resentful because I know there will be no turkey, no stuffing, no green bean casserole. As consolation I am planning a Thanksmas dinner which will star all these amazing dishes! Thank you Alison for another amazing Thanksgiving special!

Wick trimmer here. Also set table night before if at all humanly possible. Then I have a completed task to admire in Thursday’s chaos! Made your turkey. FABULOUS! Even impressed my persnickety aunt, our matriarch. Made a separate fennel, onion & apple dish and used all my allotment of fennel so used just leeks and celery as bed for turkey. Delicious and subtly flavored drippings that were pleasantly salty - I brined for @69 hours. I adapted my family fav giblet make ahead gravy. My nephew/godson pronounced it “bananas”! Highest form of Millenial praise. Put the carcass and thigh bones on with my scanty aromatic remains and set it to low simmer overnight for a 24-hour bone broth for turkey, wild rice, chickpea and white bean soup I’ll make tomorrow. I think turkey stock is the very best (other than veal). Thank you for sharing your process and your life and many congratulations and best wishes for you, the baby and your husband. You’ll be welcoming folks back for the holiday before you know it, and teaching your kid by example and have a little helper, too.

There’s so much fat rendered from roasting the wings I use that instead of butter to make the roux for the gravy. And eating part of the wing is definitely the chef’s treat! I really appreciate your style of cooking - I have a lot of fun with your no fuss approach.

What worked for my mashed potatoes last year was warming up the cream and adding it in top of the mashed potatoes on a big container. It gave me more room to mix everything up.
Oh! Growing up, my parents always made the stuffing in the turkey. My grandparents did not. I loved my grandparents stuffing, and that’s how I prepare my stuffing now! Love your Thanksgiving videos! ❤

When I do my potatoes the day before I swoop the top put a few pats of butter on top and then stick them in the oven... It creates an awesome crunchy top the potatoes don't keep getting worked so no chance of glue
