Turkish Kofta Kebab "Köfte"

- Kofta is a popular meatball type of dish in Turkey and the middle east.
We have many kofte recipes and kebabs in Turkish cuisine.

I will make a kofte kebab, the way we make it at home, easily using a food processor in this episode. The great thing is you can freeze and cook whenever you want to have a ready meal
Ingredients For Kofta Kebab:
500gr. ground meat (you can use 30% lamb if you like and preferably at least 20% fat)
2 medium-size onions
4 tbsp ground stale bread/bread crumbs
a big handful of parsley (optional)
1 tsp each black pepper, salt, paprika
1/4 tsp baking soda (optional) - you can add 3-4 drops of lemon juice over the baking soda before you add it.
To serve:
1-2 big firm tomatoes
6-8 green sweet peppers
olive oil to brush the griddle or pan

I’ve made some form of Kofte hundreds of times but this one has two tips that really bring it over the top: let the meat mixture rest before cooking and cook low and slow

Got a good Turk Cypriot place in my home town dose very good Kofta. They put it on long skewers on a hot grill.. not quite like this though home cooking.

I recently made this recipe for my husband after our trip to turkey and we ate lots of delicious meatballs (like every single night)! I just have to share with you that tonight my husband helped me to make these Turkish meatballs and the rice pasta dish for our dinner tonight and we grilled tomatoes and red peppers and it was just fantastic. We did use plain yogurt to top the meatballs and we were able to talk cheese inside them and he just loved it and he is now a big fan of cooking from Turkey and I have a feeling will be cooking even more of your recipes. You make it look easy and I appreciate the clear instructions. And that rice pasta dish is outstanding. Thank you so much.
Interesting idea with the cheese. I m reluctant to try it though: somehow Köfte and Cheese sounds unnatural to me :)

In Romanian cuisine ( mostly influenced by Turkish) we make something similar but use garlic and baking soda and mix with bone stock. Meat is a mixture of sheep and beef, no parsley. I am going to use your recipe and make these delicious kofte, Thank you!
