I just have to share with you that tonight my husband helped me to make these Turkish meatballs and the rice pasta dish for our dinner tonight and we grilled tomatoes and red peppers and it was just fantastic. We did use plain yogurt to top the meatballs and we were able to talk cheese inside them and he just loved it and he is now a big fan of cooking from Turkey and I have a feeling will be cooking even more of your recipes. You make it look easy and I appreciate the clear instructions. And that rice pasta dish is outstanding. Thank you so much.
In Romanian cuisine ( mostly influenced by Turkish) we make something similar but use garlic and baking soda and mix with bone stock. Meat is a mixture of sheep and beef, no parsley. I am going to use your recipe and make these delicious kofte, Thank you!

Great video and I'm glad you're using a pinch of baking soda. As you mention it adds a little bounce to your meat and makes the meat more juicy. This is a trick used by the Chinese called "silking" and is a great way to keep meat moist, tender with texture. I've been concentrating on Indian food for so long I've forgotten about the other cuisines I love. So maybe you can answer a question. I'm having my mother around for Sunday lunch and want to do something just for two people.. So what would you suggest that would be authentically Turkish???
These look delicious. I can't wait to try them! I use bread crumbs as a filler when I make beef burgers. I've seen some people use gram flour for kebabs instead but I find them much drier.
That is a great tip. I’ve also found that using chickpeas blended in a food processor instead of chickpea flour makes the kofta much more juicy. It doesn’t allow the meat to dry when it’s cooked over a charcoal grill.

I bake a lot of sourdough bread and I often leave thin slices to stale for breadcrumbs when I move onto a new loaf! This will be a good way to use some up and we also love köfte! And kaşar! :D But I hardly have any cheese left and I am planning on making hünkar beğendi tomorrow! I must buy more...
Sounds great! The kofte would be even more delicious with sourdough bread. I love hunkar begendi too. One dish I haven't uploaded I think besides many eggplant recipes I have :)

Interesting idea with the cheese. I m reluctant to try it though: somehow Köfte and Cheese sounds unnatural to me :)
