- FUN FACT: Did you know a group of minimum-security inmates at the South Placer Jail is responsible for cooked meals distributed around the community, and in both jails?
It’s another program at SPJ intended to teach inmates a skill to help them get a job when they’re released from custody.
The food and ingredients are provided by Summit Food Service, whose employees help to oversee inmates in the kitchen along with correctional officers.
Inmates are responsible for cooking breakfast, lunch and dinner, and for every eight days worked, they get one day shaved off their sentence.
Inmate Hector Ortega, one of the head chefs in the kitchen, is sharing his story of how working in the kitchen is helping him get out a month early, and what his plans are when he’s released.

Excellent program for the inmates. I can imagine it gives them hope for when they are released. I think a culinary school onsight would be great.

I hope they realize what they are learning In there can be brought into any kitchen on the outside. Speaking as a chef of over 20 yrs I can say the menus may change but the dynamics of the kitchen are always the same. It's a great program for these guys & I hope they take advantage of it.

Many good things from this video other then food and a very clean kitchen. 8 days of work leading to a day in reduction of the time is a very good thing, I hope other such places follow this. And I hope he is doing well along with his family, landscaping and cooking work, same goes for others too. And hats off to Summit Food Service for turning this into culinary program. This would surely be helpful for them to find a job or have their own work and others can have some good food as well.

I worked as a cook for 90 days in Rockford Illinois jail. And I’ve been to prison twice and worked in kitchen

Work helps to pass the time faster . After your done with your work it makes you feel a sense that you accomplished something . I'm glad that particular jail is giving men responsibilities over the cooking . I hope more jail systems will do the same .

That is crazy this popped up on my recommendations, I was released from there earlier this month and was in that kitchen. That officer was the absolutle worst.

That food looks tremendous, I’ve only been to jail once(Saratoga County Jail) and the absolute worst part-aside from the substandard facility and crushing boredom-was without question the food. No fucking salt. No shittin’, stinkin’ pepper. No goddamn butter. No sugar.

Wherever this county jail is, the food looks way better than Los Angeles County jail which serves horrible slop like molded stale bologna sandwiches some with dead cockroaches inside. Whenever it's sandwiches, got to look inside if there is any bugs otherwise they will be part of your meal. I was in L.A. County for a couple days on unpaid traffic ticket warrants and the food there, my dog won't even eat it. Thankfully I wasn't in there too long, the moment I was released my girlfriend picked me up and I pigged out at the nearest Denny's, food never tasted so delicious. Inmates inside should sue L.A. County sheriff for serving inedible food.

Slave labor working 12 hrs 7 days a week. Work 8 get 1 day off sentence, that's a crime in itself. Should at least be 1 for every 4 days.

They're getting a whole steak with each meal. Teaching them skills is great but we also must not digress from the fact that prison is meant to be punishment. They should not be eating better than school children, homeless, or the sick in hospital. Sometimes I really wonder who the clowns are that are deciding where our tax money goes. During inflation, honest working folks can't afford fat steaks on their plates like that, what a joke.

What?!?! 8 days work for 1 days off?!?! In Cincinnati we get 2 days off for every 1 day you work!!!! You can get a 6 month sentence over in 2 months.
Getting experience in cooking is good, you can always find a job as a cook. Not at all a drug free environment through lol.

Yes, there needs to be an emphasis on rehabilitation. If you brutalise inmates and treat them like animals, once they're realised would you want that person living next to you? Or would you prefer it if they'd been treated with respect, like a human being, and taught how to live peacefully and happily in a community?
