      Equipment

      1 loaf pan
      Ingredients
▢½ cup active sourdough starter fed within 12-24 hours *see notes
      ▢½ cup unsalted butter room temperature, 1/2 cup = 8 tablespoons = 4 ounces = 1 US stick
      ▢⅔ cup packed brown sugar
      ▢1 teaspoon vanilla extract
      ▢1 teaspoon baking powder
      ▢1 teaspoon baking soda
      ▢1 teaspoon salt
▢3 medium bananas mashed (the riper, the better)
▢¼ cup honey or maple syrup
▢2 large eggs beaten for vegan bread, substitute 1/2 cup unsweetened applesauce or 2 flax eggs
      ▢2 cups all-purpose flour
      optional
      ▢½ cup chopped nuts
      Instructions
Preheat the oven to 325ºF. Lightly grease your loaf pan.
Combine the butter, sugar, vanilla extract, baking powder, baking soda, and salt in a large bowl. Mix by hand until smooth, about 2 minutes. Or use a stand or hand mixer on low speed for 1-2 minutes, until the mixture is smooth.
Stir in mashed bananas, honey, eggs, and sourdough starter discard. Combine until smooth, though there might be small lumps of banana. Add all-purpose flour, 1/2 cup at a time, stirring in between. Then add nuts, if using.
Pour the banana bread mixture into the prepared loaf pan. Smooth the top and let rest at room temperature for 10 minutes.
Bake for 45-60 minutes, or until a toothpick inserted into the middle of the loaf comes out clean. If banana loaf gets too brown, cover it with foil during baking.
Allow bread loaf to cool for 10 minutes in the pan before removing and slicing to serve.

      Notes
Active Sourdough starter - fed within 12-24 hours
When we say active, we mean a mature starter that is at least a week old and always doubles in size within 4-6 hours of feeding. It doesn’t mean you need to use it at the peak activity after a feeding.
Do not refrigerate the dough! Our recipe does not use a refrigerated rise. If it gets too cold, the fermented yeast will not rise overnight.
      Overnight rising guidelines
Rising times will vary according to your room temperature and humidity:
      80ºF about 4-5 hour
      75ºF about 6-7 hours
      70ºF about 8-9 hours
For temperatures under 70ºF it can take up to 12 hours or more
      How to Store Banana Bread:
Store leftover bread in an air-tight container at room temperature for up to 5 days.
Freeze for longer storage (up to 3 months).

I had this at K-Paul's in New Orleans about 25 years ago. Delicious! K-Paul's had delicious jalapeno cornbread too.

I thought you guys were saying "ball bin". Makes me think of the plastic ball pits that McDonald's used to have. "You can smell the ball bin and taste the ball bin."

Bread Pudding is a cold weather dish
    it is substantial
    it is warming
    it is perfectly sweet
it feeds a snack to a large family for cheep
and with a touch of Bourbon it warms the skin

First let me say I love you guys and your videos. Alana is getting to be a very big feature which my wife and I love. But I got to tell you it kills me every time I hear you guys say bourbon. If you wanted to be American accurate, you would pronounce it berbin... Not boorbun.

I'm with Mr. H, I rarely go for boozy foods but I'm glad you like it. Probably have the same effect with RUM BALLs. And, yes Banana Pudding any day over! Can't love everything! Elana giving it a 9?!? She might like liver when she's older! lol

Just go easy on the bourbon. It can be overpowering.

Bourbon does have the same bite as brandy. Moonshine, I've tasted the legal kind ,is very fiery and has a less complex flavor ,at least the most basic one,I didn't like it. Not surprising Bourbon and Brandy are meant for civilized sipping, moonshine is used like vodka,to get a buzz quickly, for those that want that,I'm more a wine or cocktail person on the rare occasions I have had adult beverages. lol.

I don't like bourbon so I would avoid making that. Another popular recipe with bourbon is a chocolate bourbon pecan pie.

This is a New Orleans recipe. It's very boozy and I'm not a fan. There are dozens of bread pudding recipes from regions all over the US. My grandmother brought her recipe from Portugal in 1904 and it and it sounds a lot like your "stodgy" Brit version. It was a good way for her to use up leftover bread and make a tasty dessert during the depression.
I would say, most New England bread puddings I've eaten, homemade or in a restaurant, are similar to the version you made...
but with far less liquor. Most often the liquor comes in the form of a warm butterscotch whiskey sauce. Plain, sweetened whipped cream is served on top. I make bread pudding when I have leftover baguette. The homemade whiskey sauce is great, but in a pinch, I put some butterscotch ice cream topping and a small amount of whiskey in a glass custard cup and heat it for about 15 or 20 seconds it the microwave. This is a great cool weather treat.

If only you could correctly pronounce bourbon. This product was invented in Kentucky in 1789 so the correct pronunciation is the USA pronunciation. I find it very grating to have it mispronounced over and over again 😔
