Fabulous Baked Grouper with Fennel, Tomatoes and Olives!!!

  • The flavors of this dish is so bright and packed with beautiful aromas!! Enjoy!!
    Ingredients:
    4 (5-6 ounces) fillet of your favorite white fish
    I used grouper in this video .
    1 basket cherry tomatoes, halved
     1/2 small fennel bulb, very thinly sliced
    Save some of the fennel fronts as well
    One cup of Kalamata or green olives, halved
    I used Castelvetrano olives in the video
    One small shallot, very thinly sliced
    2 tablespoons of drained capers
    1/4 cup extra-virgin olive oil
    1/4 cup of dry white wine
    Zest and juice of one lemon
    2-3 tablespoons of white truffle, butter, herb, butter or unsalted butter
    Diamond, kosher salt and freshly ground black pepper
    Fresh Thyme Sprigs
    Fata Paper - 16-18 inches, parchment paper or foil sheets.
    Bake at 425° for 12 minutes or until the fish is cooked through.
