I cook dishes very like this in the U.S. however, my chicken comes wrapped in plastic and I have to soak it in a vain attempt to remove the chemicals the animals have been fed and injected with. It is practically tasteless, compared to how our food used to taste. I can never find tomatoes like the ones in the video, but fortunately, all the spices like turmeric, chiles, garam masala are available. Of course, cooked over a fire it must be twice as delicious as the "modern" food available to us now. What is cauliflower salt?

Fascinating! I only wish we knew about their personal stories...where they met, their dreams for the future, what disappointments and hardships they've endured. What happens when one can no longer sit on the floor? (I am 83, so i consider such things.) I love to see all the food preparation, and it all looks delicious. Delightful to see that i use the same spices in my Middle Eastern dishes. Sending love from America.
And yet, not to poeticise the hard work and living conditions, we in the West have lost so much. How many families in the U.S. enjoy times together like this? Our children would be on cell phones or parked like zombies in front of televisions. I do wonder what those brown circles are on the palms of their hands, that apparently they sleep with. Also, considering the lack of privacy and personal space, how do parents manage to have so many children??
I wondered about that as I couldn't imagine anything edible thrown away, but just after this one, I started watching "Unseen Afghan Recipes" and they are making something with the chicken skins. I hope you see it.
