The game would actually look a decent bit less interesting from an out of bounds view, unless you're just curious about it on a technical level. Basically, the maze is always randomly generated and only the few "tiles" aka the hallways and intersections you can see are present at any given time. Whenever you stop moving, the game uses some technique (raycasting or something, I don't know how the texture part works personally) to teleport you back to the map's "origin" if you can even call it that, mapping everything you see on-screen to a texture which ends up becoming the new maze. From a third person or noclipped perspective, it would just look like the player stopped and the tiles around them were swapped out and given the new texture. I'm not familiar with how the mutators in the paid steam version work either, but they only change how the textures are rendered on the walls. The generation and teleportation within the maze is the same.
I’d love to see a third person view of someone playing this, like out of bounds so we can see how it morphs and stuff
