Make sure your filling is hot when you put on the meringue so it will cook the bottom of the meringue. If not, you will get water. When you put on the meringue, make sure it touches the side of the pan. If you don't, it will shrink up really bad. This pie looks so good. I'd love to have a piece.

When my ex b/f's mom made this, the meringue would slip off the curd and it was a bit watery. I've never made this, because I didn't want this happening, cz I figured that if she'd been making it for years and it still did that, then it would happen if I made it cz I've never made this pie before. Thanx for the tip! :)

I can guarantee that at least 75% of her subscribers really appreciate her hard work..if you noticed she said that the recipe is time consuming and you have to wait three hours at least to let it cool...she spent over 5 hours working on an eleven minute video, so that we could learn how to make it. I know that i appreciate all of her hard work and if you don't then you shouldn't be watching this..

Laura thanks sooooooo much for this recipe.....i just made it and it came out delicious.....better than restaurant's desserts ....i made a few changes to the recipe and I added 3 tbsp of heavy cream to the lemon curd and i also added 2 tbsp extras of sugar and about 1 tbs of lemon zest to the merengue and the result was .....heavenly.....it was delicious......thanks so much........i love to watch your channel....specially when i feel like i dont want to cook ..

Even though my mom complained it was too sour, I loved it very much. The lemon part was gelatinous and meringue didn't fall apart when I hadn't put cream of tartar. The only problem was I forgot to make holes on the crust by fork and realized after baking. I was afraid the crust might be raw but it was really ok and I am so happy right now.

Oh the answer, yes you can make half by halving the ingredients. You cannot freeze the pie with the meringue but if it's without the meringue then you can freeze.

Awesome recipe. The website where the recipe is needs a bit of adjustments. Such as the website recipe does not have the same measurements as mentioned in your youtube video for some ingredients. Otherwise, good recipe to follow once you get to her website. More helpful of the recipe is seen under the youtube video ... instead of a website link to the page the recipe is one. Better if it is all in one place.

Try these tips:1)Use about 1/4 cup of sugar per egg white. You can use less, but not less than 2 tablespoons per egg white otherwise the foam will not set. 2)Use a super fine granulated sugar; this will help to firm the meringue better than the conf. sugar; and make sure to beat until thoroughly dissolved and firm peaks. 3)The filling should be piping hot when you add the meringue. The heat from the filling will begin cooking the bottom of meringue making it less prone to leaking or shrinking.

Looking forward to trying this out.(just an aside: not really a lemon curd. Curd is similar to a lemon filling or custard in that it is cooked on the stove but yet it does not contain a thickener such as cornstarch (corn flour). Is the water an important element for the pie filling or can more lemon juice be used?

All of Laura's recipes are made keeping different countries in mind, because she chooses ingredients that anyone can get. She always mentions it in her videos. Also, she was born and raised in Italy, so that really contradicts your statement...don't be ignorant, self-centered and rude, then tell other people that they are.
