Looked good. But I’ve noticed on my 560...since it’s a gravity smoke. You really prolonged the cook and slowed the bark by blocking it with the secondary pan you caught the drippings with.
I noticed that also, I made some adjustments and have smoked some great briskets and ribs. Thanks for watching and for the comments. Have a great weekend.
