I couldn’t see it, but what oil temp are you at before frying? Did you use straight buttermilk with no seasoning? What flour did you start out with before adding seasoning? Looks tasty, now I need to bag that turkey to try this out!!!

From my experience do just buttermilk on the marinade and then use all purpose flour with a couple tbsp of corn starch along with a good seasoning ratio. Canola or vegetable oil works fine
