The non GMO variant of corn we have in Naija has more starch. You have to add flour or other binding if you use American corn, which is usually bred for sugar/syrups.
If you are near African & Asian stores, native Americans, or Mexicans or it's fall, you should be able to find various type of corn that have greater starch content naturally. It might have different color though.
