1:55 since it's walled with a solid block, if they have any blocks with them (even just a slab) and they time it correctly, they can place the block below their feet and it gives them something to stand on. From there, they can mine their way out or continue placing blocks until they reach the top.
Here's a more fowl version of the lava/anvil on scaffolding trick: 1. build scaffolding very high up 2. Place some blocks around the scaffolding 3. Get excessive numbers of eggs 4. Hatch as many as you can or see fit. 5. Sit back, hope your friend gets curious, and witness the slowly descending army of chickens. It's entirely harmless if you don't put enough to lag the server that much and don't put the trap where a bunch of fowl could cause problems but boy is it hilarious to watch their shock, confusion, and laughter. If you do this sort of thing to your friends on just a server where you all play together, it'd be safe to say you might not be friends with them anymore at the end of the day
For number two, with a Redstone inverter, you can put a torch on the back of the block so when the diamonds are broken, it will send a signal to the tnt to explode it. The obsever way is much easier though.

I think you can disarm the skulk/tnt mine cart trap in some (not all) cases with another tnt mine cart activated in water. The damage will break the tnt mine cart entity next to the skulk sensor and thus disarm the trap. (To try and build blocks around your trap to hide it would be kind of redundant and ruin the nature of the trap)
I would like to say that the skulk sensor and tnt minecart trap is defusable, so you should put two tnt minecarts so they can only break one at a time. This trap doesn't work if two people are there
