I'm pretty sure the "fat" you mention in the pho aka tendons is not fat but rather rich in gelatin. They are actually LOW in fat and high in protein. A lot of skin/joint related product actually contain lot of collagen so next time tell your friend don't worry and just enjoy it.

Inconsistency, too salty, pho noodles are overcooked, broth doesn't taste beefy. Pho is the only thing on their menu and they failed. Will never return. They charged nearly $20 for a bowl of pho takeout. My kids were hungry in the morning and it's the one of the pho close by that opened early.
