    If your gonna try pho for the first time, you have to get the rice noodles thin noodles, not the big noodles. That's why he doesn't like it, because that asian guy order both pho places with big noodles.

    You should let him try the broth first then put the lemon after . Lemon change the original broth.

    I'm pretty sure the "fat" you mention in the pho aka tendons is not fat but rather rich in gelatin. They are actually LOW in fat and high in protein. A lot of skin/joint related product actually contain lot of collagen so next time tell your friend don't worry and just enjoy it.

    Pho Papa is prolly one of the best spot for Pho in San Jose. You picked a great place

      You gotta be kidding. Pho Papa can't even cook pho right. The last 4 times I ate there, there was always something wrong with it. Inconsistency, too salty, pho noodles are overcooked, broth doesn't taste beefy. Pho is the only thing on their menu and they failed. Will never return. They charged nearly $20 for a bowl of pho takeout. My kids were hungry in the morning and it's the one of the pho close by that opened early.

    They call it fresh noodles because they’re not dried. Fresh noodles are homemade or usually vacuum packed and refrigerated at the Asian grocery stores 😏

    your friend killed it bruh, i introduced my middle eastern friend ashkan to pho for the first time years back, but i was a bit sad that he barely made it halfway and threw in the towel 🥺

    that's not fat .... that's tendon... you should try it with egg noodles ... it has a nice bounce to the noodles ... north and south pho has slightly different flavors. If Pho Hanoi is true to its name/location then it's northern style

    Most Vietnamese eat bung cha ca ,bung rieu , bung Bo hue, bung mam, bung nam vang , hu tieu , mi quang ,mi Trung , Banh canh , cao Lau, and the list go on soo many soups

    The ego and pride I got when I went to Vietnam with my girlfrind (Vietnamese) and ate Pho and she said: "The one you do back home is better than this one" ...ohhh.

    Noodle are called fresh because it's made fresh daily. The thin one are dry noodles from a package.

    Tip for all kind of vietnamese soup noodle: Taste the broth first then adjust it to your liking, i've seen alot of people thinking it's mandatory to add hoisin/siracha.......

    I don’t like pho Hanoi. It a bit too salty for my taste with no sweet. I like my pho a little bit sweet but also not too sweet
