Dunno if this counts but I'll add something from Final Fantasy 6. I know you already have FF15 but this attack kills EVERYTHING except zombies, so yes, also the FF15 adamantoise if he's here. First thing you should do is cast vanish. I don't think this acts as a "hit" since it is a double edged status effect spell where you get invulnerability against physical but vulnerable against magical. This allowed ALL enemies to be hit by the doom spell(insta-ko), except undead since Doom does the opposite. It hits even the final boss who is normally immune to doom
1. Never say Sulyvahn again. 2. Any boss can be one-shotted in Dark Souls 3. 3. Never say Machete again 4. If you say a boss can be one-shotted, show a clip of the boss being one-shotted.

Final Fantasy VI: Ghost Train This can be a long, drawn-out boss fight, or, since it is undead, you can just use 1 Phoenix Down on it, and you're done! :)
BONUS: Panzer in bo3 Zombies chronicles. Do the same thing that you do for margwa. Equip popshocks gobble gum and knife him but it actually takes like 2 times at knifing. But once you are like always a quarter killing him he rests for like 4 seconds from his mask being destroyed so just knife him a couple times or as many times as it takes and he will die so no need to worry about round 8 for the panzer to spawn and get the fire staff easier to release your hellish attacks to make hell be on earth.

In Bomberman 64, Hades (the giant robot at the end of Red Mountain) is taken down in one hit if you manage to throw a pumped-up bomb inside the cockpit where Orion is (although making that possible is a hassle).
Salazar from Resident Evil 4. When I first played it on Ps2, it took me hours to beat him. My friend laughed at me, loaded his file, and beat him in ONE SHOT from a rocket launcher that I was too stupid to keep in my cache. He still makes fun of me for that to this day. The bastard.
Cerberus in Castlevanie: Circle of the Moon. After a single play through of the game, you can start a new file with the name "FIREBALL" to play in Magician Mode. This starts the player out with all 20 DSS cards that are normally strewn about the game. By combining the Diana and Griffin cards, you can fire off the most powerful attack available at that point in the game -- an arrow of wind -- that can immediately defeat Cerberus.
This list isn't very good due to the fact that many of the "one shots" were all contingent on you meeting certain parameters first. Thus not making it truly a one shot. Or using examples that weren't actually bosses

Are we not going to talk about Draygon from Super Metroid? You can burst one of the electric pads open with a Super Missile, once that happens, switch to Grapple Beam and let Draygon grab you. While he's holding you, you can use the Grapple Beam on the electric pad and it latches on, which electrocutes Draygon and goes down easily in one hit. Now the rules for this list were that the health bar can't go down and that it must be instant. But, once you latch onto the electric pad, you can't let go even after releasing the button, so it has the same properties of a one-shot
efestus5 BNK3R would've made a much more logical choice for a 1-shot boss from a Borderlands game than Iwajira. It is much easier and more effective to b0re BNK3R than it is to get the right circumstances needed to 1-shot Iwajira.
Baal - Diablo 2 Hell difficulty. Somebody (not me) did the math and figured out that with the correct equipment, Necromancer's Poison Dagger skill does enough damage to kill Baal in one hit even on Hell. You just need to wait for about 30 seconds for the poison to do the work.
Saturn, Hyperius, OMGWTH, BNK-3R and Motor Mama are really the only ones that get fucked by B0re, it's not as strong and godly as people say it is in normal gameplay or bosses that aren't those 5.
When i read the title, i instantly thought of the Tyrant from Resident Evil, you can beat the final boss with one shot using Barry's Magnum. You can't get the best ending with that method, but oh well
I'm not judging most of this list, but where the crap is San- Hah, fooled ya. I actually want to know why the Navel Piranha Plant from Yoshi's Island wasn't on this list. If you shoot an egg at the tiny flower before you get close enough to start the fight, Kamek comes out with a different text, and the flower explodes like the other bosses do after dying. So, this isn't a glitch.

he has scripted dodges meaning he technically does take damage but it isn't show and the amount of times you hit and missed is stored into his hp database meaning that you are basically doing 1 damage each hit until he eventually dies
Electrocutioner in Batman: Arkham Origins is always a one hit (technically a kick) knockouut. You don't kill him, however, so I'll suggest Himiko at the end of Tomb Raider. After defeating an army of goons, a heavily armored Oni, and Matias, Lara defeats the big bad of the game by stabbing her mummified corpse with a torch during the life-transfer ceremony, burning her mostly dead host body before Himiko can steal Sam's. It's interesting in that each boss is significantly easier than the previous one.
scroxer1 it's okay. But they did add a dark souls boss to the list.. They added 3 if I remember correctly, I just wanted to point out that all or most of the bosses are possible to one hit.. But completely understand that they want to put other games bosses on the list as well :)
every boss from dark souls 1 can be 1 shot killed with the right setup (most of the time using red tearstone ring, power within, Tin Crystallization Catalyst and dark bead)
5:02 Ancient Dragons in Skyrim only show up from levels 48+ So saying they wreck early adventurers doesn't make any sense. Because by the time you reach level 50, you will probably already have the Daedric/Dragonbone Smithing Perk(s) in the Smithing Skill Tree. This means that they do little to no damage to the player. Also, I would recommend that "Sneak-Attacking" the dragon with a dagger would be best considering that Sneak-Attacks do x15 the normal damage with daggers if you have the Assassin's Blade Perk. Yu Yevon. There are ways to kill him in two hits, but the way to kill him in one is that he's actually susceptible to doom, which means you can hit him once, stop taking character turns and say "Omae Wa Mou Shindeiru", and by the end of that the doom counter will be over and you win.
P5 - the reaper. If you wait until flu season and enter mementos there is a chance it will be inflicted with the status affect despair which will insta kill in 3 turns without you doing anything

Technically you can kill all (or at least most) bosses in skyrim in one hit with Mehrunes razor. For those of you who don't know, it has a magical property that allows one hit kills. The only problem is that is down to luck whether you get the one hit kill or not. On my first playthrough on skyrim I used it on the Alduin boss fight. I didn't get a one hit but it was only 4-5 hits.
Final Fantasy 6: The Phantom Train. Use a Phoenix Down on it to kill it in one hit. Spiderman 2: Mysterio. When you finally get to your last encounter with him, he's robbing a store. Just punch him. Or kick him. Either will down him in one hit. Mass Effect Andromeda: the first Fiend you fight on Eos (Though not considered a Boss later, at that time, with low-level equipment it certainly functions as one). Use a Cobra RPG on it. May not one-shot on the higher difficulties, though. Undertale: *Most* of the Boss Fights can be ended in one hit, provided you go through the required actions to turn their name yellow in the ACT menu. (Some cannot be brought to that point, however.) From there it takes only one strike to off them. Oblivion: Mage Guild story-line. Your final mission for the Mage's Guild involves killing an evil wizard (surprise, surprise). If you want to avoid actually attacking him, go through his dialog to start the 'fight' then run away from him. As with most enemies in Oblivion, once he starts chasing you he'll follow you to the ends of the earth. Lead him into an Oblivion Gate and then raise your shield and use knock-back to push him into a pool of lava. Rinse and repeat until he burns to death.

From re4, you get a rocket launcher literally right before the boss fight you have to shoot the eye of the claw thing that can 1 hit ya, then when the leaves reveals his body you use the rocket launcher and that's it of him, large boss room too
Fafnir, Magicka. The boss of chapter 11. He can be killed in one shot with the dragon-slaying sword. Downside is, that sword is found in level 2. Meaning you can't die once through most of the game. And he's the only dragon in the entire game, so the sword is useless otherwise.

In Resident Evil 5 you can ''one hit'' any boss with the RPG even if the boss was supposed to die from using bombs around the map or trap them in something. Once you use the RPG it just jumps to the cut scene of them dying
Batman Arkham Origins, Electrocutioner. He taunts you so much your first attack literally knocks him out, which is a drop kick. There isn't even any need to use gear either, normal enemies take 3 hits to knock out 1v1 but Electrocutioner is a hired assassin, a boss and he's done in 1 hit.
I can think of : All Terraria Bosses Kalle Demos from Wind Waker. Some bosses in FFIII can be killed in a single round with reasonable levelling, and with absurd levelling a single attack. Can't really be a single attack without cheat codes.
Sans doesn't count. It is mandotory to attack him before you can kill him. He means the bosses that can be defeated by attacking once. Sans requires you to attack like 20 times before he falls over. Then gets back up... Then disintegrates...

If you shoot an egg at the tiny flower before you get close enough to start the fight, Kamek comes out with a different text, and the flower explodes like the other bosses do after dying. So, this isn't a glitch.

he has scripted dodges meaning he technically does take damage but it isn't show and the amount of times you hit and missed is stored into his hp database meaning that you are basically doing 1 damage each hit until he eventually dies

You don't kill him, however, so I'll suggest Himiko at the end of Tomb Raider. After defeating an army of goons, a heavily armored Oni, and Matias, Lara defeats the big bad of the game by stabbing her mummified corpse with a torch during the life-transfer ceremony, burning her mostly dead host body before Himiko can steal Sam's.
It's interesting in that each boss is significantly easier than the previous one.

every boss from dark souls 1 can be 1 shot killed with the right setup (most of the time using red tearstone ring, power within, Tin Crystallization Catalyst and dark bead)
5:02 Ancient Dragons in Skyrim only show up from levels 48+ So saying they wreck early adventurers doesn't make any sense. Because by the time you reach level 50, you will probably already have the Daedric/Dragonbone Smithing Perk(s) in the Smithing Skill Tree. This means that they do little to no damage to the player. Also, I would recommend that "Sneak-Attacking" the dragon with a dagger would be best considering that Sneak-Attacks do x15 the normal damage with daggers if you have the Assassin's Blade Perk. There are ways to kill him in two hits, but the way to kill him in one is that he's actually susceptible to doom, which means you can hit him once, stop taking character turns and say "Omae Wa Mou Shindeiru", and by the end of that the doom counter will be over and you win.
The ancient wyvern can also be killed by a jump attack as soon as you enter the boss fight if its head is down.

For example... Did you know that the post-game final boss of Etrian Odyssey V, Star Devourer, can be killed in one hit? Good luck being able to do it though! You're going to have to deal just a little short of 100.000 damage in a game where over 2000 is already something that most characters cannot do.
Similarly, the Egg Dragon in Lufia 2: Rise of the Sinistrals can be killed in one hit. It involves feeding it a healing item, which overflows its HP to the point where any hit kills it.

Technically you can kill all (or at least most) bosses in skyrim in one hit with Mehrunes razor. For those of you who don't know, it has a magical property that allows one hit kills. The only problem is that is down to luck whether you get the one hit kill or not. On my first playthrough on skyrim I used it on the Alduin boss fight. I didn't get a one hit but it was only 4-5 hits.

From re4, you get a rocket launcher literally right before the boss fight you have to shoot the eye of the claw thing that can 1 hit ya, then when the leaves reveals his body you use the rocket launcher and that's it of him, large boss room too

Fafnir, Magicka. The boss of chapter 11. He can be killed in one shot with the dragon-slaying sword. Downside is, that sword is found in level 2. Meaning you can't die once through most of the game. And he's the only dragon in the entire game, so the sword is useless otherwise.

In Resident Evil 5 you can ''one hit'' any boss with the RPG even if the boss was supposed to die from using bombs around the map or trap them in something. Once you use the RPG it just jumps to the cut scene of them dying

Batman Arkham Origins, Electrocutioner. He taunts you so much your first attack literally knocks him out, which is a drop kick. There isn't even any need to use gear either, normal enemies take 3 hits to knock out 1v1 but Electrocutioner is a hired assassin, a boss and he's done in 1 hit.

Kalle Demos from Wind Waker.
Some bosses in FFIII can be killed in a single round with reasonable levelling, and with absurd levelling a single attack. Can't really be a single attack without cheat codes.
The Eye of Cthulu can be insta-killed, only if you're lucky though. It has to be hit by a fallen star, which barely ever happens.
The rest of Mega Man X bosses when you head on to the Sigma stages with Hadouken, you missed that
