I've made this twice before to perfection... but the third time I had to cut the recipe in 1/2 because i didn't have enough hazelnuts and I was never able to get the hazelnuts to cream. The product is still good- but too thick... I wonder if I just didn't have enough nuts in the blender to be able to turn to hazelnut butter? Anyway- regardless- it's still going in my mouth! XO

This looks amazing. Do you have to keep it in the fridge? How long before it goes bad?
Probably best to keep it at room temperature. I forgot that chocolate will harden at colder temperatures so I put mine in the fridge, which solidified

Can you roast hazelnuts that aren't in a shell?
Yep! We use hazelnuts with no shells here, but they do have the skin on! We first roast them with the skin on, then remove most of the skins after roasting. But you could certainly use skinless hazelnuts here! Hope this helps!
