    HELP! I have been tempering chocolate without issue for months (I love your vids!) till about two weeks ago. I use Callebaut Callets, milk, white, 60 & 70% and having an issue with all of them now. I thought it might have been the callets maybe they were not stored property at the store, so went out and bought another brand in bar form and still not working. I check with a blade and it gets hard within a few minutes and seems to be in temper, but when I pour into a mold for bars or shells, every time it falls out of bloom. I live in Spain and it is just starting to become summer here... Any suggestions?

      Depending on the thickness of the chocolate, it may need to go straight in the fridge after pouring to remove some of the heat. We have other tutorials on tempering and storing chocolate 😊

    Why do you say to use opaque bags to keep the leftover instead of clear? Just curious, thanks!

    • @KirstenTibballs
      @KirstenTibballs  2 роки тому

      Light effects the chocolate. So the opaque packaging is best and to be stored in a cool dry place :)

    If you had to use a glass bowl would it still be ok? would it still work?

    • @KirstenTibballs
      @KirstenTibballs  4 роки тому +1

      It would but it may get too hot if you tempering, if you are just melting it will be fine.

    I wanted to make chocolate covered strawberries and with my luck, melted the chocolate and the heat cracked the glass bowl in the microwave. Had to toss the chocolate and bowl. Who wants glass covered strawberries 🍓 😅

    • @KirstenTibballs
      @KirstenTibballs  4 роки тому +1

      Yes but be careful as it can get hot and un-temper your chocolate!

    • @lostintime8651

      she already said in the video not to. it gets too hot. plastic is better.

    Interesting. I kind of wondered if it would melt at all, given the fact microwaves are fine-tuned to agitate water molecules, and chocolate is fat-based and has very little water content.
