Tips for begun bhaja: motey pieces ache lagte hain
Try and sprinkle rice flour , kurkure baatein hai. Besan bhi sprinkle kar sakte ho.
Jewal namak aur haldi se bhi bahut ache bantein hai. Pieces zaroor motey hi rakhna.

I am a bengali but we dot put rawa or suji on the begun.. just use sarso tel and haldi namak.. that is it.. and then fry..i love begun bhaja..barsat je mausam me plain khichri and begun bhaja is a bliss..

You can try this simple recipe too of begun bhaja ...
Put turmeric ,salt and some sugar in the round pieces( little thicker) of begun and mix gently ,keep aside for 10/15 minutes and then fry in mustard oil.Have these bhaja with luchi(puri made of maida) or rice dal or Khichdi.

The bagun bhaja looked delicious ! if however as a Bengali myself , to add a bit moe authenticity next time...try ** adding a touch of sugar to get caramelized blisters ** cut the round thicker so it's more fleshy ( Avinash was correct) and dust with ** atta or maida or even a touch of besan.

Main bengali hoon, hum log begun vaja (baingan fry) mein koi coating nahi dete hain.. Haldi powder and salt acche se lagake usko fry karte hain mustard oil mein bass, koi koi pinch of sugar bhi dete hain but that's optional and kisika man kare toh thora red chilli powder bhi de sakte hain thora spice up karne ke liye.. Aur jab hum beguni banate hain (kind of baingan ka pakoda) tab hum baingan ko lamba lamba slice karke usko besan mein coat karke mustard oil mein fry karte hain, uss besan mein red chilli powder, salt, kalonji and pinch of baking soda (taki fry zyada cruncy ho) deke uss mein thora paani dalke uska ek batter banate hain and uss batter mein baingan ko coat karke fry karte hain
Monsoon ke time pe kabhi try karna tea ke sath beguni (baingan pakoda) bohot accha lagega 😊

Maam, being a Bengali, it feels immensely good when someone tries out our own dish Begun bhaja
But to prepare authentic begun bhaja, you just need to cut the brinjal into mota mota pieces, marinate with some Haldi and salt and baht thodi si chini( for the colour)
Keep the marinated brinjal covered for 15min- 30min
Pour mustard oil, heat that up, then fry the brinjals in low to medium flame untill they turn light brown in colour
Take out from the oill, serve with daal-chawal or Phulko luchi
You'll love this recipe more I bet ❤
