British Tottenham Cake Recipe | Traditional Old School Dessert| cake recipe by Rosy’s salt&pepper
This summer treats yourself to nostalgic vanilla raspberry cake, first baked this traditional old school cake in the eponymous north London district in the late 1800,and still British favourite.this is an excellent cake for summer birthday parties- children find the pink square irresistible and colour is all natural ingredients.

Ingredients:
225g soft margarine or butter
225 g caster sugar
4 medium eggs, ( I used 3 large eggs) room temperature
1tsp vanilla essence or extract
Grated zest of 1 orange
300g self raising flour
1/3 cup of milk ( room temperature)
For the topping:-
120 g frozen raspberries
300g icing sugar (sifted)
2 tbsp desiccated coconut
Bake in preheated oven at 180.c for 30 to 35 mins .
Self raising flour - 1 cup of plain flour +1 1/2 tsp baking powder +1/4 tsp fine salt
